Grilled Chicken Quesadillas

Reviewed: Aug. 5, 2009
Great recipe! Very easy and simple to put together. I did a few changes though: I used the taco bell fajita seasoning instead of the adobo (dont even know what that is and didnt have time to look) and I only put cheese with the chicken (picky husband). I also used bonless skinless breasts. I cooked this in my humongous skillet on the stove. Worked great! (took a little practice to flip!) I scaled the recipe down to half and it still made a LOT for my husband and I. I have 2 days of leftovers for my lunch, fine with me! I served this with mexican rice and it was a great new dinner. Thanks!

Won Ton Wrapper Appetizers

Reviewed: May 25, 2009
WE LOVED THESE! I had them at a bachelorette party and just had to find the recipe. Well I found this and I believe it is the exact same, and are SO GOOD! I brought them over to a shindig at my inlaws and all of them loved them as well. One word of advice, COOK YOUR SAUSAGE FIRST. And drain it good. Otherwise you will have quite a bit of greasiness going on, ick. Try these!! I made all 60 and had plenty for 7 people and some leftover. BTW I used the fillo cups from the freezer section, PERFECT and so easy.

Cinnamon Rolls III

Reviewed: Apr. 8, 2009
My husband has a Granny that makes LEGENDARY cinnamon rolls, for years they have been the BEST. Well move over granny, THESE are the best now!! (so says my husband, lol) Thanks Miss Alix! And thank God for bread machines!! I did use a different frosting, posted by someone else on here. It was 1 stick butter, 1 egg yolk, 2 cups powdered sugar, 1 tbs vanilla, and a little milk if too thick. (I didnt need the milk) Awesome. (I also put 1/4 cup melted butter and brown sugar on the bottom of the dish before the rolls.)

My Best Clam Chowder

Reviewed: Apr. 8, 2009
Very good. But not what I was hoping for. It didn't really taste like clam chowder from a nice restaurant, like I was hoping. I think I will leave out the bacon next time. Mine was VERY bacony! It was hard to taste the clams, in fact, my husband said he couldn't tell they were even in there. :( It WAS a very good soup though! We enjoyed it, but very HEAVY. I ate half a bowl and I felt like I had ate 2 full ones. Changes from others suggestions: Added the bacon and grease, used cornstarch instead of flour (1/4 cup) and added drained corn kernels instead of the other veggies. I also used clam juice instead of water. Also, it makes a LOT, I took leftovers to the inlaws. :)

Grilled Salmon I

Reviewed: Apr. 4, 2009
YUM! Love this recipe it makes the salmon absolutely delectable. The hubby even likes it and he usually hates seafood. (I cooked mine in the foil packets in the oven with the marinade on top, as I usually dont have time to marinade before hand)

Nanny's Spaghetti Sauce

Reviewed: Apr. 4, 2009
Im usually not a fan of red sauce, more of a white sauce girl, but I needed a sauce for spaghetti and the stuff out of the jars at the grocery store are YUCK. This recipe is GOOD. I will eat it and enjoy it. Its not my favorite and I don't like to eat it often, but its good. The hubby liked it as well.

Maple-Garlic Marinated Pork Tenderloin

Reviewed: Nov. 26, 2008
This was okay. I now have another smell that I hate. Sesame oil. GAG ME! I was really worried when that was all I smelt in the marinade (and my whole house, ugh) but it didn't come through a lot after cooked thankfully. I cooked it in the oven for 40 mins covered, then uncovered for 20 or so more. Anyway, it came out okay, but I think I might have overcooked it a bit. (need to get a thermometer) It just wasn't one of our favorites.

Lemon Cream Pasta with Chicken

Reviewed: Nov. 26, 2008
This was good! My husband went back for seconds, so that is always a good sign. I did cook my chicken before hand for times sake. But other then that I followed the recipe. I did add a little less lemon juice, and wished I had added even LESS because it was too sour for both of us. So will do that next time. Loved the idea of cooking the noodles in the broth, tasted great.

Baked Pineapple Casserole

Reviewed: Nov. 24, 2008
I was excited about this recipe, but I won't be making it again. It was verrry pineappley and the bread was just ick. (I used sandwich wheat bread). Maybe if you use a different kind of bread...but it was very soggy and just not a good flavor. I tried it again the next day cold, and it was slightly better. Anyway, I'll pass on this one.

Chicken Puffs

Reviewed: Oct. 1, 2008
AWESOME. Just love these. I've made them three times now. They are my GO TO recipe for appentizers. And they NEVER last long! Try them! You'll LOVE them. I didn't add the onions (yuck) or garlic. But I did add a 1/4 cup of shredded cheese! Also, a little advice with the dough. When you roll it out and it is in triangles, press the two triangles together and cut that now rectangle in three. They get PLENTY big enough in thirds.

Swiss Steak Quick and Easy

Reviewed: Oct. 1, 2008
I really liked this. We are on a TIGHT budget right now so I was looking for a good cube steak recipe. I don't believe I changed anything besides adding a little soy sauce (love that stuff!) and just putting mushrooms and not the tomatoes and such. Only problem was the recipe didn't say whether to follow the gravy packets instructions with water etc, thankfully I DID. Would have liked to see that stated in the recipe. I also didn't cook it THIRTY to FORTY FIVE MINS, my gosh, saw no need. Maybe about 15. Served it over mashed potatoes and had corn and bread. The picky husband liked, victory!

Incredibly Delicious Italian Cream Cake

Reviewed: Jul. 25, 2008
Good but not incredible. I've never made a cake from scratch so that was fun, or icing for that matter! All in all it came out well, tasted good, but I believe my box cakes still had a better flavor. The icing was very good though! But I did put too much cream I think (the 2 tsps the recipe calls for) because my refrigerated icing slid off the sides a bit and made my cake top slide a little on the bottom cake (I only did 2 layers, there is NOT enough batter for three! Or icing!) Also, I followed HJONES99's advice with the eggs and my cakes rose well. Although lopsided :/ I also lined the bottom with parchment and then nonstick sprayed the sides and bottom of the parchment and WAM cakes slid out by themselves! Also omitted coconut as my husband and I are not fans. Sorry for the novel. Overall, good cake but not sure if I'll make again.

Cheesy Ranch Potato Bake

Reviewed: May 20, 2008
AWESOME, thats the word to describe these potatoes. And so easy! Its just my husband and I so I bought 3 large idaho potatoes and used about 2 tb of butter a cup of cheese and just mixed in ranch until I was happy. Didn't use the chili poweder, neither of us likes spicy stuff. Mine did stick to the bottom, BAD. I even pamed it! Dunno what happened. So they were a bit mashed lol. Thanks for the great recipe, try it yall!

Glazed Meatloaf I

Reviewed: Apr. 23, 2008
I LOVED this meatloaf. I really am not a big fan of meatloaf, but my husband liked his moms recipe, so I figured I'd try this one out because of the rave reviews. Im so glad I did! He said it was better then hers! I ended up doubling it and making 2 loafs to feed my husbands family as well. They all loved it! I served it with the corn cassarole recipe I found on here, yum! Things I changed: I took another readers advice and used a tube of crushed Ritz, and couldnt find boullion granules, so didnt put that in. We dont like onions, so I just put half a packet of onion soup mix in (thanks to those who recommended that!). But even that made it a little 'onioney' to me, but no one else. I also only had lime juice on hand, so used that instead of lemon, didn't notice a difference. The top glaze is what MAKES this meatloaf, but if you aren't into sweets you might want to reduce the sugar, my husband scraped a lot of it off on his second piece, lol. I cooked it for nearly the 10 mins, then turned the broiler on high for the last few mins to get it a little carmeley, but watch it close!! Hope this was helpful!
