Easy Salted Peanut Chews (Cookie Mix)

Great recipe! It was very easy and came together very quickly. Everyone raved about how tasty these treats are, a big hit with our guests. I followed the recipe exactly and I would not change a thing.

Pina Colada Punch

Ooh la la, oh so good! This punch is so good! I followed the recipe as written and was very happy. I did use the crushed pineapple, but processed the heck out of it with my food processor after reading other reviews not being happy with the "chunks". It worked great while still adding a little bit of texture to the punch. This does make a ton, so be prepared with a big bowl or pitcher. Also, mine did not freeze to slushy consistency in 4 hours, it took much longer.

Mini Key Lime Cupcakes

Very yummy, made it for a tropical themed party. I used Heavenly White Cake (from this site) for the cake portion. I followed the recipe as written for the topping and frosting and they were very good. Not too sweet. The key lime topping started to run off my cupcakes after a while, so next time I may try to make that a little thicker.

Island Kielbasa in a Slow Cooker

Good recipe, but needs modifications to make it 5 star. I used 1 cup ketchup and 1 cup chili sauce. I reduced the brown sugar to 3/4 cup and that was plenty sweet. I also added a chopped onion and green bell pepper. I served over rice and it was very good. It does make a lot of sauce. Next time, I may add corn starch to thicken as others have suggested.

Rolled Fondant

This is the first time I worked with fondant. I did substitute corn syrup for the glucose syrup. I think it came out OK, I was not crazy about the flavor, but then, does fondant ever taste good? It's mostly just to have a nicely decorated cake.

Kentucky Butter Cake

Good recipe, the result is similar to pound cake. It is very dense, buttery, and mellow flavor. I made Ruby-Red Strawberry Sauce (from this site) to eat my cake with.

Ruby-Red Strawberry Sauce

Delicious recipe! This weekend we enjoyed it on pancakes, biscuits, and Kentucky Butter Cake (from this site). It is terrific. I used frozen strawberries and after thawing, mashed them up a bit since I didn't want whole or sliced strawberries in my sauce. This recipe is a keeper!

Caramel Shortbread Squares

This recipe is good, but not great. I used many of the other reviewers suggestions such as, doubling the recipe and using a jelly roll pan, poking holes in the shortbread to help the shortbread and caramel layers stay together and finally, adding a bit of shortening to the chocolate to add a bit of elasticity. That being said, they looked pretty, but were also somewhat bland? Very sweet also. I thought of the other reviewers who overcooked their caramel giving it a burnt flavor and thought that may be the key. Perhaps I needed to develop the flavor of my caramel a little more.

Queenie's Killer Tomato Bagel Sandwich

Very tasty sandwich. I was drawn to this recipe because my favorite salad is a Caprese salad. I made the recipe as is, and it is good, but decided to add a few drops of balsamic glaze to the top and it was perfect! I can see doing variations with mozzarella cheese. Also, fresh basil is a must!

French Buttercream Frosting

I did not care for this AT ALL. Most of my guests said the frosting had a greasy flavor or like eating butter. Appearance-wise this frosting looked fine, but we were very disappointed by the flavor. Will not make again.

Heavenly White Cake

The name of this cake says it all-HEAVENLY! I rarely make cakes from scratch, but this is one where I will make the exception. It is well worth the time spent to make this. Like other reviewers, I mixed the batter first, and then whipped the eggs whites and gently folded together. Also, as another reviewer pointed out, you need to carefully read the recipe and measure your flour AFTER it has been sifted. I baked mine in 2 - 9 inch rounds for 30 minutes and they came out perfectly. Amazing flavor and texture.

Divine Hard-Boiled Eggs

You'd think boiling an egg would be simple, but it's not. The method in this recipe REALLY works! It produced beautiful yellow yolks with no green. The hardest part is peeling the eggs. I think the biggest factor in peeling eggs is the freshness of the eggs. Very fresh eggs will not peel easy. I tried the baking soda method and gently cracking the egg shells before cooling and neither method made it easy to peel the eggs. My eggs were too fresh.

Haystacks II

Great classic recipe. I feel like the ratio of melted chocolate to chow mein noodles and peanuts is not quite right. It doesn't seem to coat them quite enough, so I would use more chocolate and/or less noodles. I did make a variation of using butterscotch chips and white chocolate chips and mixed in heath toffee bits with the noodles. That was an amazing combo!

Pretzel Turtles

Great easy 3 ingredient recipe. I used Dove chocolates with caramels and square pretzels. The first few batches I pressed the pecan half a bit too hard and caused some of the caramel to ooze out. The key is to very GENTLY press the pecan half into the chocolate. Also, I lightly toasted the pecan halves before putting these together and it adds another subtle flavor.
