Black Bean Vegetable Soup
The best black bean soup I've ever had was in a cafeteria. It wasn't like most black bean soups. It was chunky with lots of vegetables. I've been looking for a recipe similar to that soup and this is it! This soup was so delicious. I had to improvise with what I had though. I didn't use carrots, used frozen corn with peppers instead, and to save money, instead of buying spices, I bought stewed Mexican style tomatoes that already had spices in it. I also added sliced celery and red pepper flakes. Sooo yummy! And it's something new to take for lunch instead of frozen dinners!
