Old-Fashioned Potato Pancakes
Needs more salt and was bland. Could be a good base for pancakes, but definitely needs to be kicked up a notch.

Tasty Lentil Tacos
Tasty recipe, although the lentil mix is not at all comparable to ground beef. Reminded me more of refried beans, but was still good. I did have to cook the beans about 10 minutes longer than instructed. Tried to use the mixture on a few quesadillas, but I wouldn't recommend that.

Black-Eyed Pea Gumbo
This recipe makes a ton of gumbo! Adding sausage or ham to this is really a must. I'd recommend to spice it up a little too, maybe cajun seasoning or hot sauce?
