Cheesy Ranch Potato Bake
Probably not the most healthy side dish I could make, but my kids will eat it so I will cut waaay back on the butter and use a good homemade dressing. It was delicious. I topped with Panko breadcrumbs just to get it a little crunch (because my son like it.). Excellent recipe. I will probably add in some of the Oscar Meyer bacon pieces next time and shred in a little onion (because my son likes the taste, but not the texture.)

Souvlaki
I've used this recipe numerous times...should have reviewed it before now. First time, I made as written and it was great. Second time, I doubled the lemon and garlic and added a bit more soy. Either way, delicious! Along with the pork, I skewered onions, bell peppers, cherry tomatoes, lemon quarters and mushrooms. Marinating 3-4 hours does the trick for my family.

Roasted Pork Loin
Very good! Used ingredients as written. I had a 4 lb whole pork loin...I did not butterfly it or cut/roll/tie it. I cut the slits in the top/sides of the loin, inserted the veg/herb mixture and baked for 2 1/2 hours at 170 degrees. When I got home from my son's baseball game, it had an instant thermometer reading of a perfect 135 degrees. I would serve this for company...but it was good for a Tuesday night! Leftovers for sandwiches, too.
