Blueberry Muffins II
very tasty, I used rice bran oil in place of butter...they are nice warm, cut open and enjoyed with a little pat of butter!

Thai Curry Tofu
This was EXCELLENT the day after! I mixed the rice(I had made yellow rice), and the Thai Curry tofu together, in the fridge over night...The next night I added seasoned salt and 2 tsps. Cumin and about one half cup of chopped fresh Cilantro......Yummy!

Quinoa with Chickpeas and Tomatoes
I enjoyed this recipe , but found it somewhat bland...next time I will double the cumin, add masala and cilanto .
