Baked Coconut Shrimp

A hit for dinner! Easy to prepare. Served with pina colada sauce and sides of noodles (husband doesn't like rice!) and green beans. Lovely. Mixed leftover everything together and heated in microwave for lunch -- tasty! I think I will use whole eggs next time for a bit of a different flavor. Yum factor is BIG on this one.

Coconut Custard Pie III

Easy and luscious! This takes less time than baking a frozen ready-made like Mrs. Smith's, and is a THOUSAND times better. Everything is on hand. I followed the recipe EXACTLY and the pie emerged after 30 minutes a picture of perfection.

Melt - In - Your - Mouth Shortbread

Looked perfect, but tasted a bit pasty. Adding some flavoring is essential. Was surprised that they didn't have a creamy, buttery taste. Mouth feel was somewhat off. I can see where they would melt in your mouth, but I guess I want a cookie with a little snap. Shortbread, to me, should have a little crunch to be fully satisfying.

Waffles I

At last! Perfect, light waffles...I've been looking for a long time. Doubled sugar and vanilla, per other instructions. Needed no special prep. Used the blender after putting all the ingredients in at once. A relief after the lead-in-the-stomach box mixes! You get a crown for this one!

True Blue Custard Crunch Pie

Fabulous and easy! I substituted vanilla yogurt for the sour cream (since I had none of that on hand), and the results were scrumptious! The taste and pop of the fresh berries comes through wonderfully...not overcooked, not mushy. The "custard" is light and smooth, not overly eggy (maybe that's what the other reviewer expected). Great warm, but keeps nicely in the fridge. You can zap pieces in the micro to warm if desired. Put this together in a snap, all by hand. No need for the mixer.

Tantalizingly Tangy Meatloaf

DEE-LISH! Trick I read somewhere: put meat on top of a couple of pieces of bread, to sop up fat as it cooks. The pineapple preserves really added a wonderful flavor. Not too sweet! Great sandwiches later!

This has endless possibilities. You can add whatever you have on hand, whatever tastes suit you at the moment. An easy, good meal. Followed others' suggestions and buttered the cup. Quick and tasty. Easy!

Spiced Bacon Twists

So good, it's bad! I think I'll halve the recipe next time and only make 1/2 pound. These are almost irresistible. Good cold too. Great on salads. Great "garnish" on veggies (broken up) or even London broil. Lip smackin' good!
