Tamale Pie I
i added pinto beans, kidney beans, chopped jalapenos...various seasonings such as garlic powder, cumin, chili powder....used a corn muffin mix for the topping.......delicious! good basic recipe and thank you!

Shrimp Scampi V
for such common ingredients, easily found in one's cupboard, wow! a quick and truly delicious meal...we loved it took longer for the oven to preheat for the garlic bread than it did for me to cook this meal! i used the frozen shrimp too and it was all still very good! definitely a keeper!

Apple Enchilada Dessert
i add cream cheese to the filling, so the filling was yummy, but the tortilla as a crepe didn't work for me....
