Jalapeno Cornbread
Had a large get together that i had promised to bring jalapeno cornbread. I had never made it before so I found this recipe and decided to try it. We made it by hand as I had to make a quadruple batch. We found the recipe to be more like jalapeno bread with some cornmeal. I would change the ratio to 2/1 bread flour to corn meal. Definitely nice with the extra peppers! (THANKS!)We found that it had to cook for about an hour (cake pan) before it was not doughey any more. Also, butter the top and add some Kosher salt for a very nice twist! Overall loved it and will make it a keeper.

Baked Dijon Salmon
Got a nice fresh Coho Salmon steak and decided to use this recipe. Followed it to a T and were very pleased with the outcome. We also used this on Tillapia fillets and our kids really eat them up. Even our picky eater ate the whole fillet. I like my fish very rare, my wife like it medium so we found that the cooking directions were perfect for rare fish. If you like it more done you may have to cook it longer. You may also want to try broiling it. I look forward to having this again!

Squash and Zucchini Casserole
We were looking for a nice veggie dish for a get together and found this. We had no ramano cheese so we substituted pepper jack. I did put rice as a bed and placed a mixture of fresh sliced jalapenos and Rotel to the middle layer. This gave it a nice kick. The dish was an instant hit with me (I like it hot!) my wife also made one according to the recipe subbing pepper jack as well and had a lot of juice so the rice bed really helps. Thanks for all your tips as you helped me with some creative thought and heads up! By the way the casseroles were a hit and all we brought home were empty dishes! We will make this a regular in our home!
