My name is Weeden I am 25 yrs old and a stay at home mom/ housewife. I have a little boy who is 5 and a little girl who is 18 months old. I love to cook for my family it gives me great satifaction and pride. There is nothing that beats a homemade meal.
My favorite things to cook
I like to cook everything. I usually leave the outdoor grilling to my spouse, he isn't handy in the kitchen but really know how to grill a steak. I cook everything from chicken to shrimp and crab. I also like to try out new recipes. I am pretty adventurous when it comes to the kitchen
My favorite family cooking traditions
My mothers meatloaf, I usually dont stray far from her meatloaf recipe. her awesome green chili burros(burritos) that I still cant make. She also made awsome french toast, but i can never seem to make mine quite like hers
My cooking triumphs
My family loves my enchiladas, I am sure it is their favorite meal that i make. They also love when i make meatloaf,pork chops and shrimp. For side dishes I know that my mashed potatoes beat out the rest. I never use instant mash potatoes.
My cooking tragedies
I have had only a few. One time i made the enchilada sauce way to hot. I must have went over board on the chili powder. My soon to be brother-in-law at the time was over for his first dinner at the time. The food was so hot they couldn't eat it, and we ended up going to a resturant that night. how embarrsing! Another one is when I made stuffed pasta shells and left the plastic lid on the casserole dish. I was so busy doing other things I spaced it out. Halfway through cook time I went to check on the shells and saw the plastic melted mess. That was horrible! Not to mention I had spent an hour making the shells and I lost the lid to my casserole dish ;)

Szechwan Shrimp
This was a fab recipe. Not my #1 favorite shrimp recipe but really darn good. I didnt have green onions so I used white and I doubled the sauce to put over brown rice. I also served cauliflower on the side. Our meal is not compete without a side of veggies. The whole family really enjoyed this and it is so easy and simple to make. My kids (5 & 2) enjoyed this also even with the spice to it, though they do like spicy foods.

Lori's Famous Crab Cakes
The kids and I liked these very much, in fact it was the most they had eaten for dinner in quite awhile. The hubby was not to impressed, but on that note he is hard to impress and is picky. I will make these again though. Also I left out the red bell pepper only b/c I dont usually have that on hand.

Baked Garlic Parmesan Chicken
This was so good and so easy to make, it came out so moist and tender and the entire family loved it. I did use crushed cornflake crumbs instead of breadcrumbs but that is the only change I made. It had great flavor. I made some angelhair pasta tossed it with pesto and served the chicken with that and steamed cauliflower. Greaat tasting meal
