Party Pinwheels

I loved these! So did everyone else at my sister's baby shower. I used Mission tortilla wraps in cheddar jalapeno and since it came with 6, I was able to make 6 and not only 4 as this recipe calls for. I used half of the ranch mix, omitted the celery, mixed the all the veggies into the sour cream, spread the mix on the tortillas, sprinkled cheese and topped with pastrami slices. Came out perfect...yum!

I LOVE the taste of these! 4 stars because mine came out a little mushy. They should be more formed. I would also like a recipe with less sugar.

Chicken Tortilla Soup I

I really don't care for soup and especially my younger sister doesn't either. She is always hating on soup and after she saw her picky boyfriend eat and rave about it she gave it a try. I'm soo glad I finally gave this recipe a try because I'll continue to make this soup! I didn't use this exactly. I started off with whole chicken thighs in the pot and seared them for a few minutes on both sides while sauteing onions & garlic with the chicken. Then added the liquids. I decided not to use hominy since I was trying to cut back on carbs. I cut corn off fresh corn on the cob. Used one can of fat free clear broth, 1 chicken bullion cube & 1 tomato bullion cube. I used 1 jalapeno chopped and a can of whole stewed tomatoes. I didn't have any black beans, but I used a can of red beans and it's just as good. Topped with cheddar cheese, chopped white onion, cilantro, chopped corn chips, sour cream and guacamole. FANTASTIC!

These were easy to make and pretty good. Although a little dry. I don't care for corn meal much, but maybe thats my problem. I made this for my dad and he loved it!

Oatmeal Chocolate Chip Cookies I

These were awesome after changing it up some. I used 1/2 cup of shortening and 1/2 cup of butter, 1/2 tbl of vanilla, a dash of nutmeg, cinnamon, 1/2 cup of pecans and 1 cup of raisins. These are thick and very chewy, loved it!

Oven-Fried Catfish

I liked this, although I modified it to my liking. I'm not a big fan of corn meal so I made a mix of flour, bread crumbs with a bit of corn meal. I didn't measure, just threw some in there. I added salt, pepper, garlic, creole seasoning and parsley flakes. I then used catfish nuggets! Turned out well and I'll be using it for a fish taco =9

Seven-Minute Pudding

Very good! And easy, even without the microwave. I used the stove and believe it was less than 7 minutes. I wouldn't use the microwave for this, especially with milk. I used this for a cake and fruit desert, sort of a trifle when I didn't have box pudding on hand and it was much better this way!

Mini Cheesecakes III

My mom has made cupcake cheesecakes before and I wanted to try it out, but don't have the recipe she uses. So I thought I'd try this out and sorry to say this one doesn't compare. I was disappointed, but they are OK.

Fiesta Chicken Casserole

My mom has been making this since I was little on occasion. It's a casserole that takes a little more time than your regular casserole. The flavors just mix together making it perfect. YUMmY!

Terry's Texas Pinto Beans

I don't care for beans, but my boyfriend loves them. So I decided to use my pinto beans I bought months ago. I never made them before so I thought I'd look up a recipe and I got a good idea on how to make mine with a little bit of alterations. I used a chicken bullion cube, onion, a jalapeno, cumin, salt, garlic powder, some creole seasoning, and a can of chipotle salsa. These are pretty spicy and good! I do love almost anything spicy =9

Best Big, Fat, Chewy Chocolate Chip Cookie

these are perfect! i've made them for my boyfriend twice who loves choco chip cookies. i only make a few large ones and keep the others small cooking them 12-13 minutes. i don't have to grease my baking sheet either or use parchment paper.

Potato Chowder Soup I

I give this recipe 3 stars because I change a lot, but it is a good basic recipe. I sauteed my potatos and onions first with oregano, pepper, garlic and fresh garlic. I cooked the chowder in my slow cooker. I added water with a chicken bullion cube. Addedd the potatos, then cooked some frozen vege mix with some maragine and salt on the stove and added to the soup. I let it cook a few hours and then cooked fresh mushrooms on the stove and then added. did the flour, margarine and milk mix the same and just added some pepper. came out really good! i'll be making it again.

Delicious Apple Sauce

i chopped my 3 apples into large chunks and slow cooked about an hour..also used 3 tbl of white sugar. pretty good and yummy with vanilla ice cream.

Microwave Popcorn

easy to make and healthy! i wanted popcorn and didn't have any box in the cabinet. i found the corn and thought i'd make some and surprised it came out so well. i added 1/2 tbl of margarine, 1tsp salt and 1tsp of oil. this also works on the stove.
