I graduated with a B.S. in Nutritional Sciences and I have always loved cooking and baking! I never experimented much in the kitchen because I'm a pretty picky eater... But ever since I got engaged I've been trying all sorts of things so my fiance won't starve!
My favorite things to cook
Honestly... oats! I love oatmeal, oat bran, oat pancakes, and everything you can make with oats! I love mixing new ingredients into it. I also love substituting ingredients in recipes to make them healthier. Bread is my favorite thing to bake and eat... I make all different kinds that are low-fat, sugar-free, and whole grain. My Dark Chocolate Chip Banana, Applesauce Pumpkin, and Banana Rhubarb Breads are definitely my favorites!
My favorite family cooking traditions
My mom has always been an AMAZING cook! She can make everything well and has always enjoyed cooking big family meals and entertaining friends. Her Christmas cookies are definitely the best tradition. She makes hundreds of cookies and tries some new recipes every year. There is always at least one new cookie to taste!
My cooking triumphs
Actually getting my mom to make some of her recipes with healthier ingredients was a triumph. I always play around with ingredients to improve the nutritional quality and have been trying to convince her to do the same. The more she tries my recipes, the more she realizes that food can be healthier without sacrificing taste! I also made up a recipe for vegan pumpkin muffins and had my family try them. My dad and my fiance actually liked them! That was definitely another triumph for me...
My cooking tragedies
Definitely my one and only attempt at black bean brownies... they were really gross...

Coconut Muffins
This recipe was super easy and the muffins turned out great! I did make some substitutions- I used whole wheat flour for half the flour, applesauce instead of oil, Splenda instead of sugar, and eggbeaters instead of the egg. I also used 1/2 cup coconut for more flavor. The recipe made 12 good-sized muffins and they were perfectly done at 18 minutes. The muffins smelled amazing and tasted great too!
