BBQ Pork for Sandwiches

Reviewed: Dec. 7, 2009
Followed recipe exactly except cooked boneless ribs all day (about 10 hrs) on low in slow cooker (rather than 4 hrs on high as recipe called for). Came out DELICIOUS! Don't skip the oven part after, it helps make it even better! This is a keeper!

Baked Ziti II

Reviewed: Nov. 11, 2009
Delicious!!! I used a 32 oz size ricotta, fresh mozzarella, 1.5 jars of marinara and added some broccoli and spinach to it and it was awesome!! The only thing it does need is some spices, I put in 2 cloves of garlic and it needs salt and pepper and if you like spicy add some crushed pepper.

Great recipe and gave salmon wonderful flavor! Loved it! (I used fresh basil instead of dried and took skin off salmon before marinating - marinated it in ziplock bag).

Oven Roasted Red Potatoes and Asparagus

Reviewed: Oct. 30, 2009
READ REVIEWS FIRST!! Ok this was delicious with changes. Luckily I read the reviews first so I reduced rosemary and thyme to 1 tsp each -which was PLENTY. I also cooked potatoes for 30 min. alone and then added the asparagus for 10 min ONLY and it came out perfect (any more cooking would have overcooked it) - so total cooking time was about 40 min. I also put garlic cloves through garlic press rather than slicing. With these changes it was DELICIOUS!

These were good but I personally would prefer them on tortillas rather than bread. Will try tortillas next time.

Apple Turnovers

These were delicious!! I did add a little nutmeg to the mixture. One things I will do next time is make the filling the day before so it cools completely before filling the pastries. I had a hard time sealing them because the warm filling made the pastry dough too soft and hard to work with. Also you can use 2 boxes of puffed pastry, there is plenty of filling, I had a lot leftover.

Cajun Seafood Pasta

Followed the recipe and it is WAY too peppery as written. It was very good but next time I will probably completely omit the white pepper.

Chili-Lime Chicken Kabobs

I thought this recipe was delicious. I doubled the recipe so I would have plenty of marinade and I added in some lemon juice as well. I used 1 teaspoon of cayenne pepper for the doubled recipe. Great summer meal!

Spicy Chicken Breasts

This is great but I did do it a little different, I added some olive oil and water and brushed it on the chicken and let it marinate for awhile. Very good, loved the flavor!

Chicken Pot Pie IX

This recipe is delicious! The first time I made it exactly as it says and it was very good but the second time I made it I added a little extra of everything and 1 clove of garlic for extra flavor and it was perfect. I just use the refrigerated pie crusts you get in the grocery store and it tastes great. If I had more time I would make the crust and it would be even better. Great recipe and easy!

Penne with Spicy Vodka Tomato Cream Sauce

I really liked this recipe. After making it once though I made some minor changes. Used more sausage and used hot sausage rather than sweet. I doubled the crushed red pepper. I added spinach. Delicious!

Chicken Enchiladas I

These were okay, needs more spice though, maybe some jalapenos in it. Also I would rather have a better sauce for the topping rather than store bought taco sauce. The filling was good though.

Easy Broccoli Quiche

Reviewed: May 5, 2009
This recipe is okay for a base to work from but after making it twice, it needed some changes. I have perfected it for my family. I pre-bake the pie crust for 7 minutes at 450, crust turns out perfect at the end, not soggy at all when you do this. I used 2 cups of cheese (half cheddar, half mozzarella). Milk should be reduced to 1 cup. Use 3 cloves of garlic. Perfect with these changes.

Fabulous Wet Burritos

The inside stuff (beef/bean mixture) was great but I didn't like the sauce. Maybe because it was canned chili and canned enchilada sauce. I bet it would be great if you made homemade chili and enchilada sauce but that would take a lot longer. I may try it one day when I have time.

Best Marinara Sauce Yet

Reviewed: Jan. 18, 2009
This sauce is absolutely delicious!! I am never buying jarred sauce again after making this. I added a little crushed red pepper because I like sauce a little on the spicier side but would be delicious without this as it has so much flavor. I followed recipe exactly (except I simmered sauce longer, maybe 1.5 hours only because I made it early). Does not need any changes. Wonderful!

Ultimate Shrimp Scampi

ABSOLUTELY DELICIOUS!!! I followed the recipe exactly (but I lessened the salt - I used about 1.5 teaspoons of salt instead of 1 tablespoon and that was plenty and I love salt, I think 1 tablespoon would be too much) and this was SOOOO good, I will definitely be making this a LOT!! My husband loved it also, YUM!

Pecan Pie Bars I

Loved this recipe, not too overwhelmingly sweet like some pecan bars can be. I used dark corn syrup because I had it and butter rather than margarine because I had it, it was great but next time I will follow the recipe exactly to see what it is like in original form. Thanks!

Grandma's Green Bean Casserole

Reviewed: Dec. 26, 2008
I loved this recipe and so did the others who ate it! I followed the recipe EXCEPT I used fresh green beans (3 lbs), blanched them and french cut them in my food processor, then followed the recipe exactly and I thought it was perfect!! Absolutely delicious and WAY better than the cream of mushroom type casserole!
