Vegetarian Sweet and Sour Meatballs

These meatballs were SO good! We loved them. I used regular bread crumbs so the batter was mushy so I added some more bread crumbs and a little crushed cornflakes. I couldn't find sage anywhere so I just left it out. I didn't have dried basil so I added fresh. I will definitely make again but I want to see if I can make this recipe lower fat as it has a TONS of calories/fat, etc. Anyway, will try with egg beater the next time to see if it comes out just as good. Will update that too. The sauce was good but I made it in on the stove. I made half and it was still too much. It was okay, will add less ketchup next time as I didn't read the reviews where it said to reduce, oh well, next time!

Carrot Burgers

I was a bit reluctant to try this recipe becuase I know carrots can be sweet but I am glad I did! They are delicious! I didn't add the sugar, I didn't think it wasn't necessary. I also left out the pepper since we don't use it. I followed the rest of the recipe exactly. I had trouble forming the patties at the beginning but then solved that by wetting one hand before forming each patty.

Quinoa and Black Beans

This was so good, the instructions were also excellent. Followed exactly except for reducing the spices a bit as we like it on the mild side. I don't even care for black beans but in this dish it was very good. I definitely recommend this!

Pie Crust III

I am giving this recipe a 3 becuase I was able to eat it but it was a pain to make. As another reviewer said, it had the consistency as wet sand, very true. I used it to make a double crust and when I went to roll out the top crust it split in two. I ended up having to make some flower designs to put over the crack and even that was a pain, the dough shapes would disintergrate in my hands. It was also bland as it doesn't have salt and I realized that after making it. I will not make again, I will try other recipes till I find a right oil based recipe that works.

Lime Muffins

The batter was dry so I added some more milk. I got 11 small muffins from this batch. I used fresh limes from my backyard and reduced the sugar as I though 1 cup was too much since my little son would be eating them too. Overall the taste was nice and limey!

Imitation Meatloaf

I thought this "meatloaf" was okay tasting. I ended up adding twice as much rice to the batter because I made it too salty, so the extra rice fixed that. What I wasn't crazy for in reality was the thyme taste, it was only a tsp but I thought it was strong. I will make again with another spice of my preference. My husband LOVED exactly how it came out and said he wouldn't change a thing. He wants me to make it regularly, so I guess that is good.

Baked French Fries II

We loved these fries! We ate them with some homemade chinese rice. At 400 degrees, they were done around 45 minutes. I peeled mine becuase I didn't read what is said about leaving on the skin till I was finished making it, it was good anyway!

Easy Cranberry Pie

This was really easy and tasty. If you use craberry sauce in a can that is sweetened you really don't need to add the 1/4 cup sugar the recipe calls for or it will be too sweet. Can whole cranberries are also too runny for a pie so I added 1/4 cup of instant Tapioca. After being in refrigerator for a few hours well, it hardened up pretty nicely.

Five Minute Ice Cream

My husband LOVES this ice cream, he closes his eyes and says mmmm....the whole time eating it! I have become quite the 5 minute ice cream "expert"! Caribbean fruits can be very sweet so I cut down the sugar a lot. I just add to taste. I don't put the exact amount of cream, I may add more or less, depends on the amount of fruit I am using. I add slowly until it turns into a ball. Some fruits are more watery so sometimes that doesn't work but after a while you get the hang of it and can just eyeball the amount of cream you will use. I used heavy cream the first few times but it tasted too buttery so I switched to half and half as someone from the recipe exchange suggested. So far I have made mango, guava, papaya, cantaloupe and pina colada. I can't wait to try other fruits! Try it!

This chips had a good taste but were a little too hard. I think next time I will try without the oil to see if that helps. I omitted the chili powder and ground cumin but added everything else.

Pie Crust IV

This was a very easy recipe to make. I put the shortening in the freezer for around 10 minutes as others suggested. I was about 2 tablespoon short of shortening and I added some butter to reach the cup since I was making a double crust. I made the dough a little wet but added some flour while rolling. The taste was really good. Used it to make Pineapple Mango Pie from this site.

Vegetarian Chickpea Sandwich Filling

This was so good!!! I was hesitant to try it because of the simple ingredients but I am glad I did! Will make often! I used like 1/4 onion instead of half and left out the pepper. I also cut the onion and celery in very small pieces so it could blend well.

Simple Whole Wheat Bread

Good recipe, excellent taste. It is really easy to make too. I like that is makes only 3 loaves and not too much like other recipes. Made twice already. What I did not like is that the recipe didn't say how long to let it rise in the bowl. I left it for 45 minutes and the top of the dough dried out a bit even with a towel over the bowl. I also reduced the oven to 325º.

Tortillas II

After having disaster with Whole Wheat Wraps from this site I was hesitant to try another tortilla recipe. But I decided to give this recipe a shot after reading the good reviews As others suggested, I added 1/2 tsp baking powder, 1/2 tsp salt and made the dough in my food processor. I let the dough rest for 25 minutes. The dough was like a play dough texture. The shaping was the hardest part and none of mine were round but just as tasty or even better than store bought ones.

Orange Loaf

This loaf was outstanding! My husband loved it! I used butter instead of magarine and reduced the orange zest to like 1/2 because I couldn't get any more off the Valencia orange I was using. I sent some over to the neighbor, an elderly couple, and they loved it too!

Cranberry Mango Bread

Didn't taste much like mango to me but it was really good regardless. I reduced the sugar to 3/4 or less cup as the mangos I used were very sweet. I only added 1 tsp orange zest and was glad as that seem to overpower the taste a little. I forgot to put the cranberries so I poked a few on top before baking and covered with dough so they wouldn't burn. I left out the walnuts.

Sweet Potato Rolls

These rolls were very good. The dough was sticky and hard at times to form the rolls but I dipped the pieces in a little flour before forming rolls and that did the trick. Dispite the little trouble forming them, the rolls were very tastey and worth it. They were very easy to make. I reduced the sugar to 2 TBS and used butter instead of margarine. I also used fresh sweet potato. I will definitely make again as these were one of the best rolls I have ever tasted.

Banana Bread VI

I love this banana bread. It is dense but full of taste. I added 1/3 cup of milk and 1/2 stick salted butter as some reviewers suggested. It is an excellent way to get rid of bananas that are ripening too fast to consume, which is usually the case here in Puerto Rico!

Chantal's New York Cheesecake

Rich and delicious cheesecake! I didn't do the water bath but did put a glass oblong pirex with hot water in the shelf below. I got some cracks but it was for opening the oven several times to peek after it was done since I don't have an oven window! But I fixed it with an icing spatula after it firmed in the fridge. I added kiwis, strawberries and grapes to decorate. Every one loved it and was even fighting over last pieces! If you want a picture perfect plain cheesecake, please follow the instructions given in the reviews below the recipe.

Quick and Easy Pizza Crust

We love this pizza! Great taste and so quick! It puffs up in the oven when prebaking. Make sure to poke the crust with a fork when prebaking (5 minutes or less). Another thing I do is sautee the vegetables in some oil then add the sauce and cook for a few minutes so I don't have to burn the pizza waiting for the veggies to cook. I then put the sauce with veggies on the slightly baked pizza crust with some parmesean cheese then top with mozzarella.
