Chocolate Cavity Maker Cake

I am typically not a fan of cake but this was delicious! I made it with a Devil's Food cake mix and Chocolate Fudge pudding mix, I also used light sour cream. The only substitution I made was Amaretto instead of the coffee liquer. The almond flavor tasted really good with the semi-sweet chocolate. I used a friend's recipe for fudgey glaze that I made with bittersweet chocolate spooned over the top and it was really good! You would never guess that this cake starts from a boxed mix. Great recipe!

Cottage Cheese, Avocado, and Black Bean Salsa

I have made this twice in one week and the first time I followed the recipe exactly. It doesn't look great but it tastes fabulous! My husband, my 5 year old and I were fighting over the last bites in the bowl. The second time I made it I added little more corn, more salsa, an extra half can of black beans and an extra avocado. Something in this mixture keeps the avocados from turning dark and it keeps for days in the fridge. I've been eating it for lunch everyday. This recipe is a keeper!

Spicy Sweet Stovetop Popcorn

I tried this and it burned. It would also stop popping when I took it off the heat to shake it constantly so I would put it back on the heat to get it going and then start shaking again. I was disappointed because I thought it sounded great, a healthier version of kettle corn.

Jalapeno Popper Spread

I tasted this at a Christmas party and it was the hit of the party! I liked it so much that I made it for New Year's with a couple of small changes to the recipe. I left out the Parmesan and added a little mexican cheese blend and I used the whole can of diced jalepenos. It was just the right amount of heat for us. I served it on sliced french baguettes. Easy and fabulous!! This recipe is a keeper and I will make it again and again.

Pumpkin Pancakes

I thought these were really good. I had pumpkin pancakes at IHOP and this is the first recipe I have found that even comes close. I did substite 1 cup white flour and 1 cup whole wheat flour for the 2 cups of white flour called for. I also sprinkled the pancakes with a few mini chocolate chips before I flipped them and I served them with real maple syrup and a little light whipped cream. Delicious! They were a hit with my 4 and 6 year old too. I will make this again! Thank you!

Texas Caviar with Avocado

I wasn't sure about this recipe, I think because of the Italian dressing, but it got such great reviews I decided to try it. It was wonderful! I love the avocado in it. I did use one can of black beans and one can black-eyed peas and I added cilantro. I made it for a potluck and everyone loved it. This will replace my other recipe for bean dip which was much more time consuming. Thank you for the great recipe!

Megan's Granola

This granola is fabulous! I did make a few changes, I substituted coconut for one cup of nuts and used less nuts in general. I used coconut oil for the oil called for but cut the amount in half. I also substituted flax meal for some of the wheat germ. I baked it for an extra 10 minutes so it was crunchier. My kids also love it!

Fresh Rhubarb Bread Pudding

I was a little bit skeptical about this recipe although I love bread pudding and I love rhubarb, I wasn't sure I'd like them together. I read the reviews and had to give it a try. Delicious! My husband, who doesn't usually like bread pudding, loved it too. I served it with a small scoop of vanilla ice cream. The only change I made to the recipe was using light wheat bread instead of regular bread. This is a keeper! Thank you!

Caramel Bread Pudding

I love bread pudding and this one was easy to make and absolutely delicious. I used light whole grain bread and it worked great. I will make this again soon!
