Skillet Green Beans
This dish was great, made boring old green beans tasty. I used fresh beans, quick cooked, and added some bacon and fresh mushrooms to the onions. Used plain greek yogourt instead of sour cream...better for you, exact same taste. Was wonderful, hubby loved it too. Will definately make again and again.

Spanish-Style Oxtail Stew
This is a fantastic beef stew. I like meat, and frequently find that oxtail doesn't provide enough meat for me...so I substitute with 1kg of osso bucco, which was absolutely awesome. During the last hour, I added 1 cup of barley, and a large sweet potato instead of the the two carrots. I also added a couple of tablespoons of corn flour to thicken up the broth. The results were stunning, it's the best stew of this type I've ever had I think. Will make again and again, and ensure I have cheaper white wine on hand next time (takes a whole bottle!). Was fantastic!

Ma Po Tofu
This recipe reminds me of some of the best ma po tofu dishes served in restaurants in Singapore. It's quite spicy though,so better to go with less cayenne pepper, and add more to your taste as it's simmering. We loved it, kids thought it a bit too spicey. Served over rice, awesome.
