Banana Sour Cream Bread
Like others, I used applesauce instead of butter and used a little less than a cup of sugar, but I used 4 bananas instead of 3 to make up for the sweetness (for a half recipe). This was really, really good! The texture is amazing, it basically melts in your mouth. I will definitely make this again and I don't even really like banana bread! Also, I made mini muffins with part of the recipe and they were great, I baked them for about 15 minutes.

Chicken Vegetable Barley Soup
I left out the mushrooms and added more veggies and barley making it more of a stew than a soup. It's great. The almonds give it a wonderful crunch and depth of flavor.
