Zucchini-Raspberry Bread
My fiance said this was the best bread I have made. Instead of shredding the zucchini I finely chopped it and the grated lemon peel is a must for the flavor!

Zucchini Yogurt Multigrain Muffins
Not an overly sweet muffin, but nice flavor. Great way to get a healthy start to the day. I omitted the vegetable oil, decreased applesauce to 1/4 cup, omitted teh white sugar, drainged the zucchini well, added 1/2 cup ground flax seed and 2 Tbsp wheat germ.

Key West Chicken
I marinaded the chicken for about 2-3 hours in a baking dish so the chicken was soaking about 1/2 way down in the marinade. I then baked it in the same dish at 425 for about 25 minutes. The flavor was great and the chicken was nice and moist. Good flavoring, but not overwhelming. Good and easy recipe worth repeating!
