Baked Yam and Potato Casserole
I am giving this 5 stars, because my husband loved it and it is difficult to get that reaction from him. I made it exactly as the recipe stated, but doubled it and it turned out great. I agree that the yams cook quicker so its best to cut them in thicker slices than the white potatoes. And I will add cheese to the middle of the casserole next time. Very yummy.

Cajun Chicken Pasta
I doubled the cajun seasoning and did 1 tsp of every other seasonings, since some reviews said it needed more flavor, and we love flavor. I made this recipe with and without meat, because I'm a vegetarian and my husband is not. I increased the cream to 1 3/4c and divided it by two pans. I added broccoli to the vegie pan and it was fantastic. The chicken pan turned out a flop, oversalted. Apparently, the creole seasoning I used is extrememly salty; doubling it was so wrong, my fault. Next time I would be much more careful with seasoning the chicken before I cook it. But, that said it is a GREAT recipe.

Pasta with Tomato Cream Sauce
Loved this recipe. Used a tomato-basil off the shelf jar to start with and used 3/4 cup heavy cream. It NEEDS chopped plum tomatoes to get more of a tomatoey taste for certain, which I didn't do the first time I made it, and regretted it. Then it makes for a perfect tomato cream sauce.
