Chocolate Eclair Cake

I didn't care for the chocolate topping too much, i thought it was too gritty. If I made this again I would just probably try replacing the sugar with powdered sugar. Also used plain graham crackers because that's all I could fine but they were great.

Too Much Chocolate Cake

this was absolutely the best! didn't make any changes but I did use "satiny chocolate glaze" from this site which made it even more delicious. don't consume without a glass of milk to wash it down!!

Lite Raspberry Mousse

Also could not find raspberries in sauce but made as written with plain frozen raspberries. Made my own cool whip using heavy whipping cream and my kitchenaid. Served on the side of chocolate creme brulee and it was a fantastic pairing!

Asparagus with Sliced Almonds and Parmesan Cheese

Followed Caroline C's advice to boil in salted water for 2 minutes then put in ice water before cooking on stove. Omitted the parmesan. Turned out PERFECT. My fiance still hasn't stopped talking about it!

Chocolate Trifle

Absolutely FANTASTIC. Made my own whipped cream and topped each whipped cream layer with heath bar chunks--I loved the extra crunch. Made again and topped the brownie layer with half a jar of caramel sauce BEFORE baking, per another user's review. I think next time I would add the caramel sauce AFTER baking, but other than that it was absolutely delicious--mom and fiance are still begging for another one!

Chocolate Crinkles II

These taste wonderful and literally melt in your mouth but they take a LOT of work! I found it very difficult to manage the dough when forming the cookies and had to repeatedly pop into the freezer for a few minutes to make it less sticky.

World's Best Lasagna

Next time I will add an extra layer of noodles and not add the salt to the meat--I don't think it really needed any. I did add a small dash of nutmeg to the ricotta mix as recommended. I would also probably double the ricotta mixture next time but all in all, absolutely fantastic recipe!! Everyone loved it! UPDATE: made this again with the few changes I wanted to make and it was EXCELLENT. Restaurant quality no doubt. Froze the leftovers and heated them up this weekend and was thrilled to discover it still tastes freshly made!

Downeast Maine Pumpkin Bread

SUPERB! My fiance's grandma insisted I share this recipe with her. I made a double recipe and poured into mini-loaf pans and shared with friends/family for Christmas gifts--they were a huge hit. I definitely recommend substituting with applesauce as another user suggested. It makes a world of difference!

Connie's Zucchini 'Crab' Cakes

I gave this recipe 3 stars for now although I have a feeling it's partly operator error. I chose to bake mine as opposed to frying to avoid the greasiness and they came out alright, but not the best. Next time I will definitely dry out the zucchini more and I think that will help tremendously.

Bow Ties with Sausage, Tomatoes and Cream

I used fat free half & half and corn starch because that's what I already had on hand. I also threw in some chopped bell pepper with the onions and garlic and some fresh spinach toward the end (so it would be wilted but not soggy). Pretty good!
