Flatlander Chili

I made this with a few minor changes based on the other reviews (1 lb sausage & 1 lb beef, tomato sauce instead of juice & diced tomatoes where it called for sauce). It was so delicious!

This was my first time making & eating stuffed peppers & it was delicious, the whole famioly enjoyed, which is rare. The only change I made was instead of tomato sauce, I added a can of italian styled diced tomatoes. I did still pour some tomato sauce over them before putting them into the oven and covered with foil while baking. Last 5 minutes I took it off, added a little extra sauce and parm cheese and let it go. It was a big hit!

Emily's Easy Sausage and Spicy Tomato Dip

This is so easy and delicious, it is a must at any gathering! I use 1 & 1/2 pkgs of the low fat cream cheese and it is enough! (low fat because that is what I happened to have on hand). My son doesn't like spicy, so sometimes I make it with the mild rotel, and he likes it!

Orzo with Chicken and Artichokes

This was pretty good, but I added some roasted red peppers, greek olives and feta cheese. That seemed to give it just the kick it needed. Will make again!

Scalloped Potatoes and Onions

this was fantastic! the only change i made was to layer in some sliced provolone cheese. i don't know what kind of a difference it made, but i had it, so i threw it in. this was a real crowd pleaser, and i have some VERY picky eaters in my family. this was the hit of christmas dinner!

No Time to Cook Chicken

This was pretty good, but I added an onion thinly sliced and minced garlic clove, 1 tsp of olive oil and some balsamic vinegar. At the end I added a packet of Lipton French onion mix with the sour creme. It was very soupy, but the chicken was delicious and the soup mixture tasted really good over the noodles.

Spinach Stuffed Chicken Breast

This recipe quickly made it into our rotation after the first time! I normally just cris-cross the bacon on top of it, though b/c it never gets crispy on the bottom. Also, I have had to make it without the sour cream sometimes, and it is still excellent. I always use more feta cheese (really, as much as I can get my hands on). WONDERFUL RECIPE!
