Beef and Mushroom Stuffed Peppers
Agreeing with other comments--it is bland on its own but with spicy peppers etc, it was pretty good. We enjoyed this recipe after some seasoning.

Grilled Ham and Cheese With a Twist
This was a fun twist-- I dipped it in a spicy ranch dressing, which added some extra kick. Next time I might substitute it with a spicy chutney or add crushed red peppers.
