About this Cook
I work full time and I have three kids aged 20, 18 and 16. I recently met a wonderful man and he has a 9 year-old son. They are not used to food from scratch and semi-homemade food, but they are getting used to being spoiled! It's a challenge to keep everyone happy at meal times, but I aim to please.
My favorite things to cook
I love to make pizza, spaghetti, chicken and rice, burritos, ok anything Mexican or Italian; love to bake- my specialties are chocolate cake, chocolate chip cookies, chocolate truffles, are we sensing a trend here?
My favorite family cooking traditions
My mom taught me to make traditional Spanish rice, enchiladas, tortillas, and sopaipillas. My aunt taught me to make biscochitos. I love making traditional Mexican dishes because they remind me of when I was young with my mom and her sisters.
My cooking triumphs
A perfect shrimp and crab pasta salad, decadent chocolate truffles, and tortillas that don't look like maps.
My cooking tragedies
Just burning stuff really makes me mad. Try not to, but I got a new set of chef's stainless steel pans which are tricky if you aren't used to them.

Chuck's Come On Ice Cream (or Night of the Red Death) Chili
Awesome is all I can say about this chili! I made it for a pot luck and work and left with an empty bowl. I added two large cans of pinto beans since I didn't have time to cook my own, which worked out well. I was also in a pinch on jalapenos, so I used the canned tomato/jalapeno combination. It was good for everyone. Next time I will make the time to use fresh chiles, but hey, in a pinch the canned stuff works too.

Crab and Shrimp Pasta Salad
I've made this several times and it is a favorite of my family and coworkers. I use more crab meat and shrimp and either a green or red pepper. It is very savory and excellent after the flavors incorporate overnight.
