About this Cook
I have been cooking for 30+ years. I basically learned how to cook by experimenting. I use to think you MUST follow a recipe exactly. Wow, was I wrong. I became a better cook when I would find several recipes that were similar and combine them to make my own recipe. My rule of thumb is... if you like it, add it to the recipe, if you don't like it, leave it out...
My favorite things to cook
I love cooking with wine and portabella mushrooms so just about anything Italian is my favorite thing to cook. I also love to grill... the sky is the limit on grilling...

Cathy's Creamy Chicken Bake
This is an excellant dish.. I had to give it only 4 stars because I changed and added to the ingredients... After spraying my dish with Pam, I lightly sprinkled some herb seasoned stuffing on in the dish, then I sprinkled each chicken piece with McCormick Montreal Chicken Seasoning and black pepper, then wrapped each piece of chicken in one slice of cheese... I doubled the sauce (cream of chicken and I used milk instead of wine), I then poured the sauce over the chicken, sprinkled the chicken with a generous amount of herb seasoned stuffing and then poured the butter over the chicken... I doubled the amount of butter.. I baked at 400 for 1 hr then covered and cooked another 15 minutes....

Comforting Cube Steaks
excellant gravy... husband loved this, although i did change it a little.... i used club soda instead of lemon-lime, to the 2 cans of cream of mushroom soup i also added 1 can of mushroom with roasted garlic. i used a packet of golden onion soup mix, added some minced onion and minced garlic.... cooked for 1 hr and then an additional 30 min.... meat was pretty tender and overall it had a great flavor.... i added the extra can of soup because some had said that the gravy was a little thin so by adding the extra can it thickened the gravy and i had plenty of gravy..... will make this again... thanks....
