Brown Rice and Black Bean Casserole
Wow! This is an awesome dish. Chuck full of all the things we are 'supposed' to eat and delicious at the same time! I'll be making this regularly. I did swap red bell pepper for the carrots and extra sharp cheddar for the swiss. I also added a clove of minced garlic and doubled the rice.
