Delicious Ham and Potato Soup

Great soup. I added some carrots and scallions. Used red potatoes. I did not have any celery but it was great without it.

Easiest Peanut Butter Fudge

Monterey Chicken with Potatoes

Read alot of reviews before making this. I marinated the chicken in 1/2 cup mild salsa to which I had added 1 Tblsp. fresh lime juice for 1/2 hour. While it was marinating I sliced the potatoes fairly thin and cut each slice into 4 pieces, put them in my roaster pan(14x9) which was lined with heavy duty foil, sprayed with Pam, lightly salted and peppered them, sprinkled some onion flakes over them and drizzled the tablespoon of melted butter over them and tossed. Baked for 15 min. in preheated 425 oven. Took pan out, pushed potatoes along side of pan and put the chicken in the middle, brushed pieces with the remaining butter and tablespoon of lime juice which I mixed in a small bowl. Returned to oven for 10 minutes. Mixed Newmans Black Bean & Corn Salsa & parsley together, poured over chicken, baked at 425 covered for 25 minutes, reduced oven temp to 375 and cooked another 20 minutes. Removed foil and sprinkled Sargento Reduced Fat 4 Cheese Mexican over chicken and potatoes and put back in oven for 5 minutes. This is so good. I will be making this often.

Cindy's Best Fudge

Creamy fudge. So easy to make. I made 1/2 recipe. Ended up with 55 pieces. You need to cut them small, because they are very rich. I sprayed a 8x8 glass dish with Pam and had no problem getting the pieces out. As Cindy said make sure you use a large pot as it does puff up. Another great recipe Cindy, thank you.

Slow Cooker Chicken and Dumplings

Delicious and easy. I put boneless, skinless frozen chicken tenderloins in crock pot with some baby carrots and peas. In a bowl I mixed soup, 4 cups of chicken broth, onion, a little Lawry seasoning salt, poultry seasoning, parsley, garlic powder, black pepper. Poured over chicken, added butter on top, cooked on High for 4 hours, used 1 pkg of biscuits, cutting each biscuit into 4 pieces, flattening each piece before putting on top. Cooked on High for 1 1/2 more hours. It was delicious!

Potato Salmon Patties

These are great. I did change it a little. I boiled 2 large potatoes, then mashed them with a little butter, salt & pepper. Add the other ingredients, omitting the eggs, dry potato flakes, and bread crumbs. Added a little Old Bay seasoning, mixed, shaped into patties, and lightly breaded the outside with Italian seasoned bread crumbs.b Browned in frying with butter. Will be making these often. Served with tartar sauce.

Chocolate Ganache

Just too bitter for my family even when I used 1/2 bittersweet and 1/2 semi sweet and also added 1/4 c confectionery sugar. It had a nice spreading consistency and I will probably try it again using all semi sweet chocolate. UPDATE, the next day the flavor was better but I still would add more semi sweet than bittersweet.

Greek Butter Cookies

These cookies are the kind you can't stop eating. I froze mine as soon as they cooled so there would be some left for Christmas. The dough is sticky so make sure you put alot of Confectionery sugar on your hands when working with it. I put 1 tsp. of Almond extract and baked them at 375 degrees for 13 min. I sprinkled them, when still warm, with red and green sugar for the holidays and also mixed sugar and cinnamon together and sprinkled that on some. I am definitely making another batch before Christmas. I only made the ball cookies because the dough is hard to work with. I did try dipping some in chocolate but thought it took away from the flavor of the cookie. Thanks for a great recipe.

So cute. I'd give them 10 stars. Very easy and delicious. I sprayed the mini muffin tins lightly with Pam and had no problem getting them out. Followed the directions exactly as written. I only got 24 and had enough chocolate leftover to make 24 more so next time I will double the cookie dough. This will be a recipe I will be making often.

Angel Chicken Pasta

Absolutely delicious. I did double the sauce and added chopped green onions and frozen broccoli. I covered it with foil til almost done so the sauce would not dry out. Served it over angel hair pasta. This is definetly going to be one of my favorites. 11/3/09 This is my favorite recipe on here. I make it at least twice a month. I now make it in the crock pot, I use frozen skinless, boneless chicken tenderloins, put them in the crock pot, double the sauce, mixing all the other ingreds. together and pour over chicken, I turn it on high for about 2 hours and then turn it to low for 4 hours. It is delicious over angel hair pasta or served with mashed potatoes and putting the sauce over the chicken and potatoes.

Cindy's Awesome Clam Chowder

This is a savoury chowder. I followed the directions exactly as written by Cindy. (I did buy minced clams by mistake but I actually like the smaller pieces).Even if you do not like clam chowder I think you would like this one, it does not taste clamy at all. I made it in the morning, planning on reheating it for dinner in a double boiler but it was so flavoursome I ended up eating a bowl for breakfast. Served with oyster crackers one night and Cheddar Bay Biscuits the next night. Will with out a doubt be making this all winter long. Awesome recipe Cindy, thank you
