About this Cook
I am the proud mother of 4, 3 boys & 1 girl. All married. I have 5 beautiful grandchildren, 2 girls & 3 boys, and another due in May 2010. They are the sunshine in my life. They give me a reason to wake up each day.

My favorite family cooking traditions
St. Patrick's Day, Corned Beef & Cabbage, Irish Mashed Potatoes, Irish Soda Bread & Green cupcakes. Christmas, my DD & I start making cookies right after Thanksgiving. We make about 12 different kinds. Christmas dinner is Filet Mignon, Baked Potatoes, Broccoli Casserole, Carrots, dinner rolls & of course dessert. Thanksgiving, Turkey, gravy, corn stuffing, mashed potatoes,broccoli casserole(people say they won't come unless we make broccoli casserole)dinner rolls, apple pie, pumpkin pie, and chocolate pie.
My cooking triumphs
Making my Mom's potato salad to taste like hers use to. And making cornbread stuffing for Thanksgiving like my sister use to make before she moved back to TX
My cooking tragedies
Making the Earthquake Cake (should be named volcano cake). It went all over the oven, the house was filled with stinky smoke, the fire alarm went off but in the end the cake was delicious. Next time I will put the filling in the middle. Live and Learn

Fudge Puddles
So cute. I'd give them 10 stars. Very easy and delicious. I sprayed the mini muffin tins lightly with Pam and had no problem getting them out. Followed the directions exactly as written. I only got 24 and had enough chocolate leftover to make 24 more so next time I will double the cookie dough. This will be a recipe I will be making often.

Cindy's Awesome Clam Chowder
This is a savoury chowder. I followed the directions exactly as written by Cindy. (I did buy minced clams by mistake but I actually like the smaller pieces).Even if you do not like clam chowder I think you would like this one, it does not taste clamy at all. I made it in the morning, planning on reheating it for dinner in a double boiler but it was so flavoursome I ended up eating a bowl for breakfast. Served with oyster crackers one night and Cheddar Bay Biscuits the next night. Will with out a doubt be making this all winter long. Awesome recipe Cindy, thank you

Impossible French Apple Pie
This recipe saved me. Went to make a pie and had no pie crusts in the freezer. Followed the directions exactly and used crushed pecans for the topping. Served it to company and they really enjoyed it with a scoop of vanilla ice cream on the side.
