This is perfect cashew brittle. The only problem I have with this recipe is getting the mixture to 'spread thin'. It really does not want to spread out, it starts to harden as soon as it hits the cookie sheet. I was able to cover only about half of the pan with the the mixture. Maybe my cookie sheet is too big, I'll try the next smaller size next time. Overall this is a great recipe, and if you follow the directions exactly is hard to mess up. Give it a try, you won't be sorry!
