About this Cook
When I was a kid and people would ask me what I wanted to be when I grew up I would say a chef. I was obsessed with watching Nathalie Dupree and Yan Can Cook! However, my mom was overprotective and a perfectionist and wouldn't even let me step foot in the kitchen! I didn't even learn how to make a grilled cheese and open a can of soup until I was 17 years old! I still was obesessed with food and cooking shows but never was allowed in the kitchen! About 21 years old I got the chance to get into a kitchen on a semi-regular basis and haven't stopped since. I would absolutely love to open a deli to share my creations with everyone as I always get compliments.
My favorite things to cook
Everything! I have an amazing meatloaf recipe that I change up a little each time I make it and my boyfriend can't get enough...it always tastes similar but never the same, boring meatloaf! Anything Italian! I am a sucker! Soups and stews and pretty much anything southern.
My favorite family cooking traditions
None...my mom wouldn't let me in the kitchen! When I have children, they will live in the kitchen!
My cooking tragedies
Baking-I am a cook, not a baker and can't seem to figure it out...must be that you must use exact measurements!

Caramel Apple Cheesecake
This recipe was quite delicious and super easy! I used the pre-packaged mini graham cracker crusts b/c I can't make a crust to save my life plus I was making for my mom's bday and didn't want to give her half the pie as I HAD to see what it tasted like. Nonetheless, I used the no sugar added apple pie filling (use sugar added if you can find) and I did notice a little difference in the taste...so I added a little cinnamon and a bit of sugar and it turned out fine! Placed the apple filling in the bottoms and covered with the cream cheese filling. Baked at 350 for about 20 or so minutes with a water bath below. FIRST TIME A CHEESECAKE DIDN'T BREAK ON ME!! I let them cool for a bit on a rack then transferred to frig. I made the sauce and added a little more cinnamon and let it cool a bit as well b/c I thought the warm sauce/cool cake would ruin it. It turned out perfect! Try this one, its easy and tasty. I added a dollop of whipped cream when I served.

Slow Cooker Chicken and Dumplings
This recipe was quite delicious and generally reminded me of home. I used onion, garlic, celery and carrots as a base added the chicken, then used 1 can of cream of chicken, one cream of celery and added broth instead of water w/salt, pepper, onion and garlic powder and thyme. Cooked all day, came home and shredded the chicken up inside the crock pot then added the biscuits and I must say, I did season the biscuits but my problem is that apparently they weren't big enough. They just disappear into tiny dumplings! Always has been a problem of mine. Guess I need to roll them into larger balls next time. Also, we added hot sauce in our bowls to taste! Great recipe though!

Mexican Corn
I made this for the first time last night and I have to say, it definitely is a twist to the same old side dish to go with a mexican themed meal. I didnt really change anything except added a little bit of cumin & chili powder to add a little more flavor. I also cut the cream cheese, only used to achieve the creaminess. All in all a good side!
