I love to cook Italian and Mexican dishes. I also love casserole dishes because they are easy when you are limited on time.
My cooking tragedies
I was trying to make my own homemade salsa about 10 years ago. The recipe called for a clove of garlic. I put the entire garlic in the salsa. I didn't know what a clove was. Everyone loved it....but then it made them sick.

Salsa II
Just made this salsa for Cinco De Mayo. This is great! Made a couple changes. I only made 1/2 of the recipe. I only put in 2 jalepenos without seeds. I boiled tomatoes and peeled skin. Then I chopped them in food processor. I also chopped everything else in the food processor. I added minced garlic and 2 teaspoons sugar. My roma tomatoes from store were not very sweet. This salsa turned out great! I am sure my guest are going to eat it all up.

Tuna Noodle Casserole II
Very good tuna noodle recipe. Can add many different things to it. My family loved it at bible study last night. We made it exactly like the recipe. The chips we used on top were wavy/had ridges. I think next time I will use different chips.

Slow-Cooker Chicken Tortilla Soup
This recipe is very tasty! I give it 5 stars. I did not cook this in the slow-cooker, but on the stove. Changes I made: I boiled chicken breast in broth and water until it was shredded. I did not have cumin, but added about 1 Tbsp taco seasoning. I also bought sliced stewed tomatoes with mexican seasoning already added. Everything else was the same. Very yummy! I do have to say I think it is a little too spicy for my one-year-old son. The soup is not too spicy for older children though, very mild.
