Garlic Pita Bread Bites

Added 2 tbsp of olive oil and garlic salt along with minced garlic from a jar instead of fresh. Soaked the bites in a baggie with the mixture, then baked 3 minutes and flipped for the last 2 minutes. They were crisp on the outside and soft on the inside. Paired well with Greek Lemon Chicken Soup.

Greek Lemon Chicken Soup

This was an absolutely yummy soup. A rendition of chicken rice soup, but better. I highly recommend not keeping lemons in for too long, as they make the soup bitter from the rind. I added 1 tsp. of Greek seasoning as others suggested and it gave it a nice kick. Also used instant rice to have it sooner. I will make this again, and again.

Grilled Stuffed Red Snapper

This was so delicious! I had to cut the green onions (tummy doesn't like them), but made no difference, I'm sure. Light and flaky! Added cream cheese to the mixture to make it moist. That was a hit.

Not as good as I thought they would be. Not sweet enough or coconutty, like the ones I buy at Sprouts. Will keep tweeking to get there.

Lemon Poppy Seed Amish Friendship Bread

Hsd to eliminate the poppy seeds, but addred lemon zest instead. Also floured the pans with lemon sugar found in a liquor store to rim a martini glass. Made it yummy with a sweet and sour crust.

Amish Friendship Chocolate Bread

I made this substituting 1 tsp of Raspberry Extract. Also found sugar for the rim of a martini glass and used that to "flour" to pan. It was called Chocolate Candy. It gave it the traditional sugared coating we love on Amish Bread. I added a third egg, like most of the other recipes call for, too. Quite good and different.

Savory Crab Stuffed Mushrooms

Wow, I made these for our company Christmas Party and they went so fast! They were absolutely devine. The only change I made was Portobellos, and used the smallest ones chopped instead of the stems. Perfect!

Artichoke Chicken

All the reviews were consistent, and I agree. It is an awesome recipe. I did make one "sightly" booboo though. I put the artichokes in a food chopper and spread them with the dry parmesan. Chopping by hand is definitely better and by all means, use the fresh parmesan and grate your own. It looks better and should taste better. I will make this again, adding sun dried tomatoes, black olives and capers. It has a Mediterranean flair to me. Very moist chicken, also.
