Banana Crumb Muffins
Very tasty! A delight and a hit with everyone who tried them. I made adjustments as others recommened including adding 1 tsp vanilla, 1/2 tsp nutmeg, and 3/4 tsp cinnamon to the batter. I also used a heaping tablespoon of unsweetened applesauce for the egg and substituted canola oil for the butter.

Valentino's Pizza Crust
Very easy crust to work with. I generally use a bit more olive oil--approximately 1/4 cup--and a mixutre of whole wheat and white flour. I also generally pre-bake the crust before topping. Makes it a bit crunchier and keeps the toppings from burning!

Pumpkin Chocolate Chip Cookies I
These are delicious! I substituted the butter/shortening with 1/4 cup applesauce and 1/4 cup vegetable oil. The were a big hit with all who ate them. A definite keeper!
