I used black beans as suggested. Using smaller tortilla's I was able to make a larger quantity of snack size, I tucked in the sides before rolling them up and sprayed them with some pam before i baked them. I thought I would have some for freezing but the entire platter got inhaled by a group of teens, LOL I guess that says it all. Next time I would use a bit less sweet potato per serving. Excellent meal or after school snack.

Made the additional sauce as someone recommended but found I simply did not need it so I'm going to try to freeze it. These were like everyone said. Covered them for 2 hours then uncover for 1 hour. No need to baste. Fall off the bone Good. I made the California Cole Slaw Recipe to go with it along with some homemade mountain bread. So nice to have a summer meal in the middle of winter.

As I make a very large pot of meat sauce and freeze several Italian meals at a time I thought I would try a Manicotti one this time. I only followed this recipe for the filling and I did not cook the noodles like all my frozen meals with pasta in them. simply used a piping bag to fill the hard shells adding just a bit more sauce to the bottom and the top and then freezing. Once thawed and baked the pasta turns out perfect and not mushy. A wonderful addition to my "mom is to busy to cook days". Very pretty dish to serve for company too and all I had to do was pull it from the freezer. Excellent
