Beth's Scalloped Cabbage

I drained the cabbage for awhile to remove as much moisture as possible. I also used saltines instead of buttery rounds, (I think it would have been too "sweet" otherwise.) This was my first time cooking cabbage, and I can't wait to cook it again. Thanks for a great recipe.

Tuna Casserole II

I cut the recipe in 1/2. I didn't have red bell pepper, so that was omitted (though I am sure it would have been great in this dish.) I didn't julienne the veggies, but I diced them quite small. I also used macaroni noodles, and monterey/colby blend cheese. I did add a little milk, thought it might be a little too dry otherwise. This is a great dish, I do have to say though, that even cutting in 1/2 it filled up an 8x8 dish for me. Thanks for the great recipe.

Creamy Zucchini with Linguine

I halved this recipe due to the amount of ingredients that I had. I followed the recipe exactly, and I have to say that you can probably get away with decreasing the amount of oil slightly. I do think that a large amount is needed however. I tasted this before I added the parmesan and thought "oh this is not going to be that great". After I added the parmesan I had to resist eating it all right then. So for me the parmesan is what brings all of the flavors together and makes them complimentary. Thank you so much for the wonderful recipe.

Deep Dish Brownies

I took other reviewers advice and only used 2 eggs, substituted 1/4 C apple sauce for butter, reduced baking powder to 1/4 tsp, used a heaping 1/2 C unsweetened cocoa powder, added 1/4 C coarsely chopped dark chocolate pieces, and 1/4 C chopped walnuts. I kept it everything else the same. I cannot believe how good these turned out. I will never buy another boxed brownie mix. I have tried various recipes, but they always came out "cakey". I cannot express how good this recipe is. Thank you so much for the recipe, and the ideas from other reviewers.

General Tsao's Chicken

This is a great recipe. I have made it a couple of times, and slightly change it up, just for convenience, and to make it a little bit healthier. I would recommend cutting back the starch though. You can get the same results with much less.

Roasted Potato Pizza Slices

This was a wonderful change. I would have never thought to do this with potato slices. I didn't use onion or bell pepper (personal preference.) It is kind of messing, but aren't all the good "finger" foods...=)

Corn Casserole I

I used low-fat sour cream, a little less butter, about 1/4c onion, and I added about 1 tablespoon diced jalapeno. I cooked this in a 2 quart glass bowl which I believe made it a little "soggy", but next time I will use a flat square dish to "dry" it out a little more for my taste. Great recipe, thanks!

Bob's Stuffed Mushrooms

I didn't use the italian seasoning, or dried parsley, and less (minced) onion (I am not a big fan). I took these to work and they were gobbled up quickly. I think next time though I might use chopped shrimp, just for a difference.

Fried Okra

I left out the salt, and fried the okra in my deep fryer on 360 degrees. Tastes just like I would get in a restaurant. I loved it, and will make again. Thanks for the recipe.

Hearty Ham Casserole

This is an awesome recipe. The only addition that I made is that I added bell pepper with the onion. I also took another reviewers advice and added some of the cheese to the mixture before baking. I made this recipe last week, and I already have the ingredients to make it again VERY soon. Thank you so much for the delicious recipe. It was a nice change.

Nutty Pumpkin Muffins

Excellent recipe. I did use some pumpkin pie spice as suggested by some other reviewers. I topped with cream cheese icing. I took these to work and people were very sceptical until they tried it. They were gone in a flash. Thanks for the recipe. I will make again soon.

My Crab Cakes

This is a great recipe I cut it in half. I only had Italian seasoned bread crumbs so I used those instead of ritz crackers. I also used about 1 T. minced onion and bell pepper. I can't wait to make this recipe again.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

Really good recipe, made a few changes; less sugar, more "spicy" spices, and used the mini muffin pans, 1/8 hot dog ratio like other suggested. All in all a really good change up for hot dogs. Didn't try the sauce because I don't like taco seasoning.

Simple Spinach Lasagna

I pretty much cut this recipe in half, because my husband doesn't eat spinach, and I didn't want to eat on it for days on end. I used a glass loaf pan to cook it in, and cut back about 10 minutes of cooking time. This was an awesome recipe. I will definitely make it again, soon.
