The Humble Shepherd

For what I wanted, this was perfect. I just made my own gravy and added some more spices (parsley, garlic powder, mixed up salt). Instead of milk in the potatoes, I added sour cream and used red potatoes.

Spinach Quiche

One of the best quiches I've made! Because I live at high elevation, I only used 3 eggs and 3/4 cups of milk. I also just used reduced fat plain feta cheese because I had it in the fridge.

Almond Lemon Chicken

I made this for about 30 people. I didn't follow the recipe exact, but I used the basic concept by combining ingredients and baking the chicken. This was faster and it turned out delicious. Everyone loved it!

Spinach Stuffed Chicken Breasts

This was a great recipe and really easy. I modified mine a little though. I did do the bacon to make it a little healthier. I used fresh organic spinach sauteeing it first with garlic and olive oil. For the stuffing, I used mostly sour cream and some mayo. I also brushed the chicken with olive oil, garlic, and misc. seasonings as well as putting fresh lemon juice on top of chicken.

Italian Spaghetti Sauce with Meatballs

This recipe was delicious! Instead of using beef for the meatballs, I used ground turkey to make it healthier. Also, I used organic whole tomatoes.
