Almond Lemon Chicken
I made this for about 30 people. I didn't follow the recipe exact, but I used the basic concept by combining ingredients and baking the chicken. This was faster and it turned out delicious. Everyone loved it!

Spinach Stuffed Chicken Breasts
This was a great recipe and really easy. I modified mine a little though. I did do the bacon to make it a little healthier. I used fresh organic spinach sauteeing it first with garlic and olive oil. For the stuffing, I used mostly sour cream and some mayo. I also brushed the chicken with olive oil, garlic, and misc. seasonings as well as putting fresh lemon juice on top of chicken.
