We generally ate whatever was quick and easy, and would feed a small army - my mother was single, worked full time, and had six children.

Soft Oatmeal Cookies
Excellent cookie! I double the vanilla and use pure mexican vanilla, because my husband loves a rich vanilla taste. I also add a quarter bag of white chocolate chips or of andes mint pieces. For softer cookies, don't flatten them - they will spread out into perfect rounds on their own, retaining a moist, chewy center.
