By reading my profile I just completed I feel I come across as aloof,but I'm not. Love cooking, but not getting into the "fusion" thing. Good meals can be done without using every gadget and/or spice in the kitchen

My favorite family cooking traditions
Trying to pass down the things I did with my mother growing up to my two children. Special memories are making Xmas Spritz cookies and now watching them get better at doing their own "dishes"
My cooking triumphs
Large parties we have, Christmas Eve indoors with 50 people. All sorts of appetizers with 3-4 main dishes. Start cooking a few days ahead. It is a pain but when its done it is a great feeling knowing you pulled it off.
My cooking tragedies
Recent bean soup that somehow tasted like a salt mine. I think my kids were helping me and didn't tell me. A couple of ducks done outside on the rotisserie that became flambayed when the grease starting dripping. Live lobsters in our kiddy pool for everyone to pick out there own and a guests child got nipped by one.

Rich and Simple French Onion Soup
This is a classic French Onion Soup recipe that I have used for years. The only change, being said by other also, is to carmelize the onions. Saute the onion on a very low heat for 45 minutes to an hour. Do not burn the onions. It adds so much more depth to the soup.

Spaghetti Olio
Instead of adding Cajun seasoning the the pasta we grill some very spicy/Cajun Shrimp and add them to the pasta. Makes a great meal.

Way too much wine. I have always used sherry in place of white wine because white table wine doesn't offer much to the dish. With that change it is an ok recipe.
