Tomato-Cornbread Salad with Avocado and Cilantro
This was delicious! The sweetness of the cornbread contrasts nicely with the other flavors. I used leftover cornbread I had made and frozen (recipe from this site). I also added some bell pepper (chopped really finely) and a dash of lime juice. It took me a long time to dry out the cornbread (about an hour and a half in the toaster oven) but it was worth it because it had a nice crunch. This recipe is going in my favorites!

Baked Delicata Squash with Lime Butter
OH MAN!!! This is SO good and so easy to make! The combination of the lime and chili in the lime butter is fantastic! I had to cook my squash for longer than 30 minutes but it was well worth it!

Penne Pasta with Spinach and Bacon
I love this recipe! I make two versions of this: one with regular bacon and one with veggie bacon, depending on who's eating. Both versions are loved. The recipe is five stars as is, but one of the great things about the recipe is that you can play around with it and is very forgiving. I like to add chopped sun dried tomatoes right before adding the garlic and pine nuts right before adding the tomatoes (be careful, they burn easily). I also prefer to put the spinach in with the bacon as one reviewer suggested. Yum!
