Coconut Oatmeal Cookies I
Had a sweet craving the other night and this fit the bill wonderfully. I reduced the sugar and subbed applesauce for the shortening. The cookies were cakey and moist and delicious. What a great way to mix a love of oatmeal and coconut! Thanks!

Sam's Famous Carrot Cake
Excellent cake, moist and flavourful; it reminded me of the carrot cake my mom used to make. It gets four stars because I tweaked it just a little. Instead of 3/4 cup oil, I used 1/4 cup oil and 1/2 cup unsweetened apple sauce, increased the cinnamon and reduced the sugar by 1/2 cup. Made it for my mother-in-law for mother's day and everyone loved it.

French Onion Soup Gratinee
