About this Cook
I am a community college instructor and department chair. I have a new little baby who is almost 14 months old. I am married to a lovely man. I adore my mother and my younger sister. Family is very important to me. Eventually, I would like to dedicate my time to working in group homes for the elderly and for disadvantaged youth (ages 5 to 10).
My favorite things to cook
I enjoy baking cakes and tarts. Recently, I made a delicious banana pudding with a twist. I enjoy cooking Mexican food--including fresh salsa, guacamole, chicken enchiladas with tomatillos and chiles. I love cooking fresh vegetables. I also do some pan frying--tilapia dusted with flour and lemon zest. My other favorite dishes to cook are jambalaya, great northern white beans and red beans.
My favorite family cooking traditions
I enjoy cooking in the kitchen with my sister. For the holidays, I enjoy my mother's collard greens and potatoe salad. She is also great at cooking meats--turkey buts, gizzards and rice, and beef.
My cooking triumphs
Back in the day, I did some really good bread puddings, yams, baked beans, gumbos, and jambalayas... The problem is that I do a lot of experimenting and forget to write down the recipes!
My cooking tragedies
Once I cooked a turkey that was in my then boyfriend's (now husband) freezer for 2 years. It turned out smelly, beef jerkeyish, and gross. I also wanted to make a coconut cream pie from scratch and my experience with the coconut will be remembered for a long time.

Buttermilk Pancakes II
OMGsh! These are the best homemade pancakes I've made so far! I didn't have regular milk or butter, so I used only buttermilk and substituted canola oil for the melted butter. Love this batch. It made about 20 regular-sized pancakes. Awesome recipe! This is definitely a keeper.

Black Magic Cake
I used another recipe that called for cake flour, so the cake was light, fluffy, and super moist. But everything else was the exact same! It was AWESOME! When I get back from the museum, I will be using the all-purpose flour. I'm sure the cake is going to be a bit denser and even more DELICIOSO!

David's Yellow Cake
My cousin wanted a yellow cake with chocolate icing for her birthday, so I went on a hunt for a moist yellow cake recipe. Although I love this website, I was skeptical of this recipe because it didn’t have a full 5 stars, and because it seemed so simple. There weren’t any tricks like superfine sugar, buttermilk, boxed pudding mix, vegetable oil, shortening, imitation butter flavoring, food coloring, etc.—just flour, sugar, milk, eggs, vanilla, salt, and leavening… Anyway, the cake came out beautifully moist and fluffy. If your version didn’t turn out right, you probably need to follow the steps precisely, and then add some patience to it.
