Chunky Potato Soup
Great soup. Used whatever cheese I had in the fridge and it turned out great anyway! Good for cold winter evenings. Made this soup for a second time now. I used red potatoes with the skins on because I hate to peel potatoes! Turned out great again. Used a little more potatoes and a little more cheese than recipe calls for. Also used just swiss cheese. Very hearty recipe.
