I have made this twice now. Followed the recipe fairly closely, with exception of putting the salsa on the chicken as soon as I put it in the oven and I just used whatever cheese I had on hand. I used Paul Newman corn and black bean salsa and it was wonderful both times!

Great soup. Used whatever cheese I had in the fridge and it turned out great anyway! Good for cold winter evenings. Made this soup for a second time now. I used red potatoes with the skins on because I hate to peel potatoes! Turned out great again. Used a little more potatoes and a little more cheese than recipe calls for. Also used just swiss cheese. Very hearty recipe.
