Baked Taco Chicken

I am not a fan of chicken on the bone, especially with the skin, but my husband loves it so I decided to give this a try. I skinned my pieces and left the skin on for his. After coating the pieces with the taco mixture, I put them on a baking sheet covered in foil and sprayed them with vegetable oil. This made them crispy on the outside, and kept my meat from drying out. I also cut up some potatoes, tossed them with some oil and ranch dressing mix and put them on the same baking sheet. My husband loved it. Next time I will put two packages of taco seasoning in the mixture. Overall a very easy and tasty meal

Slow Cooker Carnitas

Wow this was amazing. My husband and I are addicted to the mom and pop taco stands around here, so I decided to give it a try. Our favorite is the carnitas tacos, but I always find them a bit too greasy (which doesn't keep me from eating them), so I decided to try to make it myself. This recipe was so good. I used a six pound roast, cut into four chunks, and tripled the spices. Usually my crock pot cooks hot, but I was getting a little worried after seven hours, so I bumped it up to high for the rest of the time. The meat was so tender and juicy. We served on small white corn tortillas with hot sauce, and decided this was just as good as the real stuff, without all the grease!

Country Style Chicken

This was amazing. I was a little bit wary of the graham cracker crumbs, but decided to give it a try anyway. I made a couple of changes to cut down on the fat content. I used oil instead of butter for the vegetables and milk in place of the butter for the chicken. There was still plenty of flavor and the potatoes crisped up on the edges nicely. The graham cracker coating got really crispy, which we loved. I will definately be making this again!

Cranberry Raspberry Sauce

One word: Amazing. My dad hates cranberry sauce, but I made him try it since we usually just have the stuff from the can, and he LOVED it! My brother started putting it on everything, and when I say everything, I mean EVERYTHING. Rolls, turkey, sweet potatoes, even apple pie. I used apple juice in place of the Merlot and it turned out fantastic.

Amish White Bread

Wow. I made this when my parents came into town, and they couldn't get enough of it! They kept saying how I was such a good cook...boy how I fooled them. I did put less sugar, as I like my bread lighter, but that is a matter of preference.

Mozzarella Chicken

The first time I made the recipe as written and we enjoyed it. The second time I used a chicken breading recipe I got from my mom, and I think it made a big difference in the flavor. Also, the second time, I didn't have any mozzarella cheese, but i had some string cheese sticks, so I thought "What the heck" and I used them instead. It was so easy and good! I just took the chicken breasts and instead of pounding them out, I just cut a slit in the middle and slid the string cheese inside. It saved a lot of time, and the cheese stayed in the chicken a lot better. I am going to do it this way from now on!

Yummy Honey Chicken Kabobs

This was pretty good. Since it's already winter here, we didn't have a grill to cook it on. I think it would have added a bit more flavor to grill the chicken than baking it allowed.

Chicken Broccoli Supper

This was really tasty and easy. I had a bit of a problem getting the pasta on the top of the dish to cook. Maybe next time I'll cover it with some foil for part of the cooking time.

Pumpkin Chocolate Chip Cookies III

These were so-o-o-o YUMMY! I didn't have any applesauce or oil, so I ended up melting butter to substitute and I didn't notice any difference. My oven bakes hot, so I kept the temperature of 350 and baked for 11 minutes and they turned out perfect. I made a cinnamon cream cheese frosting to go on top for some added calories, and they were divine.

Sweet Mustard Chicken Bake

I don't really like babying my chicken while it's in the oven, so I took the advice of another reviewer and simply dredged the chicken breasts in the sauce and then rolled it in crushed butter crackers to bake it. The result was a moist chicken breast with lots of flavor and a crispy coating. My husband loved it! I also reduced the butter to about a tablespoon, with great results.

Amish Meatloaf

My husband tasted this and immediately said it was "card worthy", the highest honor a recipe can receive in our home. I used cooked and crumbled bacon inside the meatloaf to save the mess in my oven. This made a very moist meatloaf with a crispy outside. Ten stars in our book!

Spicy Baked Sweet Potato Fries

I think I must have done something wrong. After reading all the reviews, I adjusted the spices to our taste (used garlic powder, chili powder and seasoning salt) and had high hopes. But no matter how long I left those things in the oven, they were not crispy at all. They came out a floppy mess, and I figured maybe my oven doesn't cook hot enough. I will try again with a hotter temperature because the flavor was fantastic.

Baked Potato Skins

Came out to be very tasty. My only complaint would be that they are pretty greasy. Next time I would reduce the amount of oil I use to still get the crispy outside, but cut down on the grease.

Hackin Chicken

I, like others, also used boneless skinless chicken breasts and thought it turned out fine. I poured the barbecue sauce over the whole thing and added shredded ham and grated cheese and baked it all at once. My husband loved it.
