About this Cook
I am new at this, but I have been cooking for a longgggg time. I would love to share some of my experiences with you. My passion and relaxation time is cooking for my family and friends. In my house, we always eat very well and healthy. When I am not at work, I spend most of my time in the kitchen, even preparing meals for days that I will not have the time. I currently publish a monthly Newsletter at work where I include one or more of my own creative recipes for my readers.
My favorite things to cook
In the summer, it's pretty well all BBQ and anything from meats, fish and seafood, and roasted vegetables. In the winter, I do more casseroles, specialty sauces, soups, oven roasts and so forth.
My favorite family cooking traditions
Usually on Sundays, I put together a full-course delicacy, whether we have friends over or not. It's my time for experimentation; I never follow a recipe, but get ideas from several different books and then create my own.
My cooking triumphs
I have made many incredible dishes that my guests have asked for the recipe, or that my wife asks me to remember how I did that. Many people have suggested that I open up a restaurant, but I wouldn't enjoy cooking if it was a job.
My cooking tragedies
Quite frankly, I have never in 30 years made anything that you couldn't eat and enjoy, but I have improved considerably over time. The first meal I made for my wife 22 years ago was a meatball with egg noodle, in a mushroom-tarragon-lemon sauce, baked in the oven with provologne and parmesan... she married me.

Shrimp Fettucine Alfredo
This is a great recipe, but my wife an I cannot stomach heavy creams, so we substituted the half-and-half with 1 1/2 c chicken broth, 1/3 c cream cheese and 1 tbsp of corn starch. You will get the same consistency and similarly great flavor. I also used raw shrimp and added a handful of chopped cilantro.
