Burrito Pie
I found this recipe to be easy and VERY good! I was in the mood for Mexican last night, so I used what I had on hand - no can of plain chilis, but there were chilis in the can of tomatoes. I added some extra tomatoes, diced, from the garden, a can of corn, and used corn tortillas in place of the flour because it was all I had. It was VERY good and I will make it again - and maybe add a bell pepper next time, too!

Quick and Easy Chicken Noodle Soup
This is the best chicken noodle soup I have ever eaten! I can't follow a recipe exactly for the life of me, so of course, I tweaked it a little, but it is incredible! This is what I did: Boiled four chicken thighs in 8 cups water until the meat fell off the bones, then cut the chicken into small pieces and discarded the bones. Sauted all the veggies as suggested by Brown Sugar Girl. I also threw in about one cup of frozen chopped spinach leaves for some extra "good green stuff" and iron! Added 6 teaspoons chicken granules and the spices as recommended by Brown Sugar Girl to the water I boiled the chicken in and returned the water to a boil. Cooked three packages of the cheapest, generic "Ramen" noodles I had in six cups of hot water in the microwave for five minutes. Drained them and added them to the pot of chicken and broth along with all the veggies and simmered for about 5 minutes (that is all I could wait!). I then had to go back and make another pot because it was so good that my husband and I literally finished off the first batch for LUNCH! That time I didn't add any spinach because I had used all I had in the freezer in the first batch, but I tripled the carrots and celery. YUMMY! Really, really yummy soup that will definitely be on our weekly rotation!

Meatloaf in a Mug
Who would think this would work? Meatloaf - in the microwave? But it works just as described and was very good! I cooked mine for 6 minutes - just to be safe. And I think you could use any meatloaf recipe (I have a personal favorite I will try next time) and it would work just as well. Thanks for a brilliant idea for a FAST and yummy dinner!
