About this Cook
I'm a stay-at-home mom to an adorable 18-month-old boy and am expecting a girl this summer. One of my favorite things about staying home is the free time I have to create wonderful dinners for my hardworking hubby!
My favorite things to cook
I love anything with cheese. Fresh garlic is my favorite seasoning, with fresh basil a close second.

Jay's Signature Pizza Crust
This was my first attempt at homemade pizza dough and I was thrilled with the results! This recipe was easy and turned out fantastic. I have used the full recipe to make one thick crust pizza and have also split it in half to make two thin crust pizzas (on a 15-inch stone). I think the texture of this crust would be great as breadsticks also.

Scalloped Potatoes and Onions
I was very pleased with how this recipe turned out! I worried that 2 hours was too long to cook them, but the potatoes came out perfectly cooked. I used red onions and instead of chopping, used halved skinny strips, which contrasted nicely with the potatoes. Also added 1/4 tsp. garlic powder and 1 c. shredded sharp Cheddar to the sauce.

Buttermilk Pancakes I
These pancakes turned out delicious! I followed the recipe ingredients exactly plus added a pinch of salt and dashes of cinnamon and vanilla extract. I used a 1/4 cup measuring scoop to ladle out my batter and it yielded about 12 pancakes.
