Italian Meatballs

I'm never making my old recipe again! These were approved by my picky eaters, and I loved them too, as did most all reviewers. So, like all recipes, modify as you need. I used everything listed, corrected for 2 lbs beef, used 2-3 cloves bottled garlic, italian seasoning, and absolutely approve of the onion soup mix. I kept wanting to add milk or egg, but you don't need it. I made about 50 big bite-sized meatballs, and only baked them for 15 minutes. Drained and used paper towels to remove excess oil, then put them into spaghetti sauce for 20 minutes--PERFECT!

Baked Garlic Parmesan Chicken

double olive oil & garlic, add 1 t oregano, plus a spritz of oil just before putting in oven so it browns. With that, served with pesto pasta, and a vegie, and it's a 5.

Cucumber Soup I

We loved this soup so much that we made extra and froze it like last reviewer. I used a little chopped potato in place of the farina and next time, will use a little vermouth or dry white wine in place of the vinegar.

Pollo Fajitas

I agree with the final reviewer--this is a terrific recipe--and also followed other's advice and used lemon juice in place of vinegar in marinade. The sauce does sound weird, but you will be adding that extra marinade to boil with the fajitas at the end.

Pork in Olive Oil Marinade

Nice flavor, especially due to the cilantro, but too much oil in the dressing. Next time, I'll reduce the oil by 1/2, maybe a little less vinegar, but use the same amount of port. I also fried garlic for last minute of pork cook time.

Chicken Broccoli Ca - Unieng's Style

Delicious! Definitely use the oyster sauce and low sodium soy sauce, skip the pepper, and add extra vegies at the end, so as not to overcook. I happened to have/used: yellow pepper, green onion, and tofu, which I added with the rest of called for ingredients. Oh...and increase the amount of sauce--it makes this recipe. Way easy and quick!

Spicy Pork Stir-Fry

Like others, I added more vegies: water chestnuts, long beans, sweet yellow pepper, shitakes; and bumped up the sauce a bit with more of everything plus little water (otherwise way too salty), and because we love it with pork, oyster sauce. My family all had seconds and I really enjoyed it too.

Vini's Pork Roast

Very nice! Like others, I mostly left recipe alone. Didn't have browning sauce and didn't need it. I did put slits in roast and added chopped garlic. Then I added garlic powder and olive oil to the spices, spread the paste on roast a few hours ahead, wrapped it in saran, and tada--our family was pleasantly surprised at how much they enjoyed caraway. It was flavorful and moist--and as the cook, you should definitely sample an outside piece too!

German Spaetzle Dumplings

Dinner group loved this dish. I've made it twice this week. The first time I doubled the recipe, and it was just enough for our family of 4. It was too wet, so added more flour like other reviewer. I also found that using a heavy quart ziplock with a few holes worked well as the extruder. The second time I decreased the milk (about 1 T less per recipe), and since I had it, used salad burnet (an herb that tastes of cucumber!), in place of parsley. The nutmeg makes these better than other spaetzle. I'll definitely make it again!

California-Thai Flank Steak

We were ready for a new way to prepare flank steak, and this one was loved by all! Per other reviewers, reduced coriander by half, and chile paste by 2/3 (but that one's up to you!), and unintentionally marinated for 24 hours! Delicious! We grow our own lemon grass, and if you don't have it, try the local asian foods store. You can sometimes find all of these ingredients in some larger groceries, including the cooking rice wine.

Asparagus Swiss Quiche

Our family loved it! I took the easy route with a refrigerated pie crust, added chopped red pepper to the sauteed onion & steamed both 5-10 mins, and as others suggested, added more eggs and milk.

World's Best Lasagna

This is truly the best lasagna I've ever made. Everyone loves it, so we serve it often, take it to parties, and share it with friends and neighbors during difficult times. It's a bit of work to construct, so I often make 2 at a time, and it freezes very well. This is a recipe you really don't need to change, though you can simplify the steps, make a mistake, change or add ingredients, and not compromise it's huge flavor. I use lean ground beef (but always do), cut the sugar by 1 Tablespoon, and use fresh basil if we have it on hand (ahhh, summertime!). Enjoy!

Balsamic Marinated Chicken Breasts

Not sure why everyone is raving about this one--cooked for 30 minutes and despite adding olive oil to the marinade, it was dry and sweetened by the balsamic--not even the fresh crushed rosemary could be discerned from the myriad other ingredients. I'm not sure what would fix it. Oh well, you can't love all of them!

American Shepherd's Pie

Wow--this was a great family meal. Like others, I added asparagus, carrots, and celery, and used generic cream of mushroom soup. Next time, I will try to have time to add fresh herbs, but the dried thyme was fine.

This is a lighter and fluffier version than similar "6 egg" recipes--our family liked this one better so we're switching. However, this is easier when mixed in a blender, and cooked in a 9X13 pan (just drop butter in pan, place in oven, pull out and swirl to coat, then add blended mixture) for the 20 minutes.

Broiled Pork Chops

When the kids and adults enjoy--it's a winner. We compared it with a Kraft sauce and prefered this one. I used very thin pork chops, so didn't need to flip. Delicious!

Butter Roast Chicken

I used the whole, uncut, fryer. It turned out beautifully, and tasted delicious, but ironically, the house wasn't filled with the lovely aroma you get from just roasting a chicken (without the basting liquid). Hmmm. No matter, it was still wonderful.
