About this Cook
I am married to my handsome husband Nathan and have been for 2 years. Our little boy, Landon Mitchell is a year old.
My favorite things to cook
I love making Italian and Mexican dishes and am known to find lots of recipes online and in cookbooks. I absolutely love Taste of Home magazines.
My favorite family cooking traditions
Cooking Thanksgiving dinner and Christmas dinner with my mom and sister. Just plain cooking with friends and family...I love it!
My cooking triumphs
I make a mean Fettuccine Alfredo from scratch and memory and am known for some excellent appetizers and desserts.
My cooking tragedies
Right after we got married, I just couldn't seem to get into the routine of cooking even though I knew how to. I didn't have many recipes...getting pregnant two months after we got married didn't help since I got horrible morning sickness. My poor guy got fish sticks and chicken bits for a couple months. :)

Restaurant Style Chicken Nachos
Didn't really care for the taste of these, though they were easy to make. Seemed quite boring, and not the fun nacho recipe I was looking for.

Nacho Potato Soup
My husband, a soup hater, absolutely loved this, though I thought it was a bit bland. He said it tasted to him like melted pepper jack cheese with potatoes, tomatoes and corn.

Creamy Shrimp Scampi
So yummy! We have been looking for a recipe like this for a long time, and this is it! We served it over angel hair noodles. Delicious!
