Eggplant Parmesan II

This is a very yummy and easy recipe to make. My mom likes eggplant, but yet she thought this recipe would taste bland, and wouldn't be too good, but she loved it! As did the rest of us. She told me to tell the original poster, thank you for the recipe! This one is a keeper.

Quick and Easy Alfredo Sauce

I really wish that I liked this recipe since it is so easy to put together but it tasted too much like cream cheese. I think that maybe if I would have added some veggies to the dish that it would have tasted better, or maybe a little more milk to make it taste a little less "cream cheeseish".

Antojitos Minis

These were just so adorable! They taste yummy, are soo easy to make, and don't take much time at all. I took the advice of other reviewers and simply cut the tortilla in fourths, they still looked just as appealing as the round tortilla bases because they all really look the same from being scrunched into a round cupcake holder, and it was a lot faster and less wasteful that way. They were a hit at a friends party I went to. I wasn't sure what to call them, so I kept telling everyone that they were spanish cupcakes. My boyfriend ate several of these which I took as a sure sign of approval. I served them with sourcream, but I'm sure salsa would also be good.

Hot Artichoke and Spinach Dip II

This reciped is awesome! I got sooo many compliments on the spinach dip when I took it to a friend's party on Friday. I didn't use artichokes, only spinach though. I used about 3/4 of a frozen bag of spinach (I believe 12 oz bag), and I should have probably only used half the bag. I added 1/8 cup milk and skipped the mayo because I didn't have any on hand, and it still came out really good! I will definetly be making this again especially because my bf was so amazed that "I can cook". Everyone I know loves Jay Alexander's con queso spinach dip and this comes very very close to it!!

Party Pinwheels

I was a little dissapointed in these. They tasted okay, not great, and were the least eaten appetizers out of the three appetizers that I brought to a party (the spinach dip that I made by combining a few different recipes and tips from this site was a hit). Also, when I combined banana peppers, and cucumbers as part of the filling they ended up tasting like pickles. I guess I should have drained the peppers better. I might make these again, but only one or two tortilla rolls.
