Vegan Brownies

A little heavy on the oil, but not too bad at all - in fact, despite the naysaying of my coworkers, I really liked these! I would make them again, for sure (and I am not vegan).

Emily's Famous Apple Pie

This pie is really easy to make, and is delicous! I used 8 apples, as listed, and ended up having enough for two 9-inch pies. For the first pie, I followed the directions exactly and used a store bought crust. It was good, but when I made the second pie I placed the spices and apples in a large bowl to mix, instead of sprinkling the spices over the top of the apples. It was much better, I thought. I also used the Best Ever Pie Crust recipe and made a lattice top, which turned out quite well.

Sourdough Bread I

I think I accidentally used too much sugar when I made this, so it was overly sweet. Even with that error, this bread is really great. The texture and crust are perfect. I had to wait 24 hours for the first rise, but I was in no hurry. A great recipe!

Mom's Best Waffles

These waffles were exactly what I was looking for - plain old waffles. They were great! They took slightly longer to become crisp than some other recipes I have used, but that was no big whoop. I will certainly be making these again next Sunday!

Coconut Custard (Zucchini) Pie

I must confess I'm not a fan of the texture of coconut. That aside, this pie was quite a surprise! It was light and refreshing - perfect for summer - and you'd never know there was zucchini in it. I can't hold my personal feelings on coconut against this dessert, so I'm giving it 5 stars!

Blackberry Cobbler

I didn't have time for blackberry picking before I made this, so I bought half blackberries and half raspberries. I used 1 cup whole wheat flour and 1 cup all-purpose (along with baking powder and salt as specified in the Allrecipes Bread collection FAQ's). I also replaced some of the sugar with honey, added a dash of cinnamon, and used a delicious Dutch butter. The results were truly excellent! Although the texture was cake-like as many have mentioned, we found it delightful. We particularly liked the contrast of the firm edges with the spongey interior. With a dollop of frozen vanilla yogurt, this easily assembled dish was a wonderful summer dessert that we can't wait to enjoy again soon!

Green Chili Casserole

A fine basic brunch recipe that we served over toast with hot sauce. We used the smaller cans of chilies, and found the amount perfect. Next time we may attempt to transform this into a "tater tot" casserole type dish. It's so easy to throw together on a Sunday morning, we'll definitely be making it again!

Lavender Tea Bread

This bread is really easy to make and very delicious! It has a cake-like texture, but isn't too heavy or too sweet (I might use just a little less sugar next time). The lavender gives it an almost mint-like freshness that's is really quite delightful. A lemon glaze, or a bit of lemon zest in the dough would be a tasty addition. I can't wait to make it again!

Banana Muffins I

These muffins are terrific! I tried one after they had cooled. It was good, but just a bit dry; however, after sitting all night in an airtight container, they were perfectly moist. Next time, I may try reducing the amount of baking powder by about 1/2 and mixing in some nuts. For easy, quick muffins, these are definitely a winner!

Jen's Tomato Arugula Bruschetta

I like the flavor of this bruschetta, although it's just a bit sweeter than I would prefer due to the sun-dried tomatoes. Also, I was a bit conservative with the arugula - I recommend using a lot! I was worried there would be too much liquid, even after I drained the tomatoes before tossing them into the skillet; however, after chilling in the refrigerator for about 10 hours, it was perfect.

Easy Pizza Sauce I

I used an 8 ounce can of tomato sauce and just a little water - along with the tomato paste. I also added about 1/2 tsp sugar and a tiny bit of lemon juice. It worked well (it was the first pizza I've made since college)and tasted fine - maybe just a little bland. One great thing about a simple sauce like this - it's perfect for experimenting!
